  • 6 medium potatoes scrubbed
  • 2 tablespoons olive oil
  • 2 teaspoons nutritional yeast flakes
  • 1 teaspoon Creole/Cajun Seasoning *recipe link here
  • 1/4 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2-3/4 teaspon salt
  • 1/4 teaspoon Cayenne pepper
  • dried parsley for garnish

Instructions

  • Preheat oven to 400 degrees F. Prepare a baking sheet lined with parchment paper and lightly spray it with oil.
  • Using a sharp knife, cut the potato in half lengthwise. Then, cut each half into 3.
  • Place potato wedges into a large bowl and toss with olive oil to coat.
  • Add nutritional yeast flakes, Creole/Cajun seasoning, paprika, garlic powder, onion powder, cayenne pepper, and salt, and mix well to coat the potatoes.
  • Place the potato wedges in a single layer and bake for 50 minutes or until baked wedges are golden brown and crispy on the outside yet tender inside.
