  • 2 1/2 pounds red skin potatoes
  • 1/4 cup vegan cream cheese
  • 1/4 cup non-dairy milk like soy, almond, or coconut
  • 1 tablespoon Vegan Butter
  • 1/2 teaspoon sea salt

Instructions

  • Wash the red-skinned potatoes and scrub well until you get rid of all the dirt.
  • Place the potatoes in a pot and add water to the pot until they are covered.
  • Place the pot on medium heat and let them boil for about 20 minutes or until they are tender. Insert a fork or knife to check whether they are tender or not. They should not feel very hard, and the fork or knife should be inserted easily.
  • Once they are done, drain the water and place the potatoes in a large bowl.
  • Add vegan cream cheese, vegan butter, non-dairy milk, and salt.
  • Mash the potatoes with a fork or a potato masher until they are fluffy.
  • Serve immediately!
