You can use any non-dairy milk. I personally like coconut milk. That’s because it is dense and brings additional creaminess to the mashed potatoes. Make sure you are using unsweetened and non-flavored non-dairy milk.
  • Seasoning: Plain salt is enough to add flavors to the mashed potatoes. However, you can add any additional herbs you like as well.

How to make red skin mashed potatoes?

Making red skin mashed potatoes is very easy. Here are a few simple steps you have to follow:

Step 1: The first step is to wash and scrub the red potatoes to get rid of dirt. Because the potatoes grow underground, they usually have a lot of dirt on them. So, you really do need to take some time to scrub them.

Step 2: Next, place them in a pot and pour water on them. Fill the pot with water so that the potatoes are submerged in it.

Step 3: Place the pot on medium heat and bring it to a boil. Let the potatoes simmer for about 20 minutes, or until they are cooked. You can check them by inserting a fork or knife into them. They should not feel very hard, the fork or knife should insert easily.

Step 4: Once they are done, take them out of the water and place them in a large bowl.

Step 5: Add vegan milk, vegan cream cheese, vegan butter, salt, and mash using a fork or potato masher. Because it is a skin-on recipe, you don’t need to peel the potatoes!

However, the best way to avoid this problem is by adding the milk slowly, so you can only add as much as you need.

How to store mashed potatoes?

You can store the leftover mashed potatoes by placing them in an air-tight container and storing them in the refrigerator. It will stay good for up to 3 days. You can reheat the mashed potatoes in the microwave or on the stovetop.

Can you freeze mashed potatoes?

Yes, you can freeze mashed potatoes. Once they are cool, place them in a zip lock bag and place them in the freezer. It will stay fresh for up to a month.

When reheating, simply take it out of the freezer, place it in a saucepan and reheat it on the stovetop. Don’t forget to stir for even reheating. Furthermore, you can also reheat it in the microwave. Place it in a microwave-safe container and microwave it for 5 minutes.

  • 2 1/2 pounds red skin potatoes
  • 1/4 cup vegan cream cheese
  • 1/4 cup non-dairy milk like soy, almond, or coconut
  • 1 tablespoon Vegan Butter
  • 1/2 teaspoon sea salt


  • Wash the red-skinned potatoes and scrub well until you get rid of all the dirt.
  • Place the potatoes in a pot and add water to the pot until they are covered.
  • Place the pot on medium heat and let them boil for about 20 minutes or until they are tender. Insert a fork or knife to check whether they are tender or not. They should not feel very hard, and the fork or knife should be inserted easily.
  • Once they are done, drain the water and place the potatoes in a large bowl.
  • Add vegan cream cheese, vegan butter, non-dairy milk, and salt.
  • Mash the potatoes with a fork or a potato masher until they are fluffy.
  • Serve immediately!
