Waffle Pizzas (Gluten-Free, Vegan)

These delicious kid-friendly Waffle Pizzas are so easy to prepare, all you need is waffles, pizza sauce, vegan cheese and your favorite toppings!

Waffle Pizza

I wanted to make Waffle Pizzas that were gluten-free and vegan, like my Mediterranean Pumpkin Pizza and my Gluten-Free Black Bean Pizza. The problem is that my waffle irons are still packed away and I didn’t care to buy a new one. Anyway, I found these gluten-free pizzas in the grocery store that were quite reasonable and decided to save myself some time and trouble to go looking for these waffle irons. As a matter of fact, I’m at the stage in my life that I told my hubby to send our belongings to Haiti on the next mission trip. I know they are valuable but I have been doing well without them for 3 years since we left Virginia and I don’t really miss them. As a matter of fact, our new home is so spacious that these things will only clutter them up. Sometimes less is actually more.

 

For these Waffle Pizzas, all you need is your favorite pizza sauce, some vegan mozzarella or shredded cheese and tomatoes and basil and there you go, quick easy and yummy! At first, Daevyd was skeptical of them but after a little persuasion he tried one, he was like mommy, ‘it is delicious, can you please make more tomorrow!’

I found this recipe for Vegan Mozzarella on YouTube that intrigued me. It seemed like a long process, plus I didn’t have all the ingredients that it called for. I also saw this recipe . So with some adjustment. I made my own which I was real happy with. See the recipe below.

For homemade pizza sauce, I combined tomato sauce, tomato paste, Italian seasoning, garlic, onion powder, sweetener and salt to taste.

Ingredients:

For the Cashew Mozzarella:

  • 1/2 cup raw cashews soaked for about 2 hours
  • 3/4 cup water
  • 1 tablespoon coconut milk
  • 1 tablespoon nutritional yeast flakes
  • 2 tablespoons tapioca starch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon salt or to taste

Directions: Place cashews and remaining ingredients in a high-speed blender and process until smooth.  Pour mixture in a medium saucepan. Heat saucepan on medium high, stirring constantly using a whisk until thickens, about 3 minutes.

To assemble:

Preheat oven 400 F. Place waffles on a baking sheet, top with pizza sauce and vegan cheese. Bake for 8 minutes until cheese melts. Garnish with cherry tomatoes and chopped basil leaves.
