  • 1 cup fonio
  • 1 cup vegetable broth or water
  • 1 cup coconut milk
  • 1/2 cup onion finely chopped
  • 3 cloves garlic mince
  • 1 teaspoon ginger grated
  • 1/2 teaspoon dried thyme leaves
  • 1 stalk green onion chopped
  • 1/2 teaspoon ground turmeric
  • 1/2 cup red bell pepper diced
  • 3/4 teaspoon salt
  • spring onion chopped for garnish

Instructions

  • Place the fonio in a bowl, add cold water, and carefully wash the very small fonio. Set aside.
  • Add coconut milk and water in a medium saucepan over medium-high heat and boil.
  • Add onion, garlic, ginger, thyme, green onion, turmeric, red bell pepper, and salt.
  • Cook for about 5-8 minutes. Add the washed fonio and stir to coat.
  • Cover the saucepan and reduce heat to cook for another 5 minutes. Fluff with a fork and stir.
