This simple turmeric fonio recipe is an answer for my search for more gluten-free alternatives that’s not rice or quinoa. It reminds me of a combination of quinoa and couscous. It is suitable for coeliacs and those who have gluten-intolerance.

It is whole grain, has a nutty bold flavor, contains all 9 essential amino acids, fiber, magnesium, phosphorus, zinc, B-Vitamins, calcium, iron. Fonio has a lower glycemic index than other grains.

I’m so excited when I found this unique grain that is so yummy and nutritious. It tastes delicious served with, Smothered Tofu Chicken, and Jamaican Bok Choy. 

Turmeric Coconut Fonio

When I first heard of this super grain, I was intrigued. It has been eaten throughout West Africa for thousands of years.  It is more than likely, the world’s fastest-growing grain. It is usually ready for harvesting as in as little as 6 weeks.  It is from the millet family and it has been used as a side dish, in soups, stews, stir-fries. 

I was so excited to learn about this amazing grain, immediately purchased a  bag from Amazon and I couldn’t wait for my delivery to arrive. It is also sold in a few selected Whole Foods Market, however, it is growing popularity daily.  I decided to do more research about Fonio and I posted an article title What Is Fornio?

The turmeric coconut fonio is made in one pot, you basically cook all vegetables in coconut milk and vegetable broth then add the fonio and cook it for 5 minutes until it fluffs up.

Fonio is definitely my new favorite grain, I find it to be easier to digest unlike wheat, corn, and rice, It keeps

Turmeric Coconut Fonio Ingredients

  • Fonio – this tiny grain is becoming popular here in the USA. It is sold in some Whole Foods Market or online on Amazon.
  • Vegetable Broth – you can use homemade vegetable broth or store-bought.
  • Coconut Milk – you can use homemade coconut milk or from a can.
  • Onion – 
  • Garlic
  • Ginger
  • Thyme
  • Green Onion
  • Turmeric
  • Red Bell Pepper
  • Salt

How To Make Turmeric Coconut Fonio?

  1. Place fonio in a bowl, add cold water and carefully wash fonio, it is very small. Set aside.
  2. Add coconut milk and water in a medium saucepan over medium-high heat, bring to a boil.
  3. Add onion, garlic, ginger, thyme, green onion, turmeric, red bell pepper, and salt.
  4. Cook for about 5-8 minutes. Add the washed fonio and stir to coat.
  5. Cover saucepan and reduce heat to cook for another 5 minutes. Fluff with a fork and stir.

Turmeric Coconut Tips And Variations

  1. Substitute water for vegetable broth. You can also replace the vegetable broth with water and vegan bouillon.
  2. Use lite coconut milk instead of full fat for lower calories.

Store cooled leftover fonio in a tight container in the refrigerator for 2-3 days.

  • 1 cup fonio
  • 1 cup vegetable broth or water
  • 1 cup coconut milk
  • 1/2 cup onion finely chopped
  • 3 cloves garlic mince
  • 1 teaspoon ginger grated
  • 1/2 teaspoon dried thyme leaves
  • 1 stalk green onion chopped
  • 1/2 teaspoon ground turmeric
  • 1/2 cup red bell pepper diced
  • 3/4 teaspoon salt
  • spring onion chopped for garnish

Instructions

  • Place the fonio in a bowl, add cold water, and carefully wash the very small fonio. Set aside.
  • Add coconut milk and water in a medium saucepan over medium-high heat and boil.
  • Add onion, garlic, ginger, thyme, green onion, turmeric, red bell pepper, and salt.
  • Cook for about 5-8 minutes. Add the washed fonio and stir to coat.
  • Cover the saucepan and reduce heat to cook for another 5 minutes. Fluff with a fork and stir.
