  • Heat oil in a large pot over medium-high heat. Add the onion and cook for 3 minutes. Add garlic and cook for another. Stir in asparagus and cook to coat for 1 minute.
  • Add water, coconut milk, bouillon cube, onion powder, and garlic powder. Bring to a boil, cover, and reduce heat to simmer for 15 minutes. Remove from heat and allow to cool slightly.
  • Using a hand-held blender or regular blender, process asparagus soup until smooth and creamy. Season with salt and pepper to taste.
