  • Onion powder: Adding onion powder to the soup will give it a more savory flavor.
  • Garlic powder: Garlic powder gives the soup a richer flavor.
  • Cayenne pepper: It imparts a more neutral “peppery” flavor to your dish.

How To Make Vegan Asparagus Soup?

Heat oil in a large pot over medium-high heat. Add the onion and cook for 3 minutes. Add garlic and cook for another. Stir in asparagus and cook to coat for 1 minute.

Add water, coconut milk, a bouillon cube, onion powder, and garlic powder. Bring to a boil, cover, and reduce heat to simmer for 15 minutes. Remove from heat and allow to cool slightly.

Using a hand-held blender or regular blender, process asparagus soup until smooth and creamy. Season with salt and pepper to taste.

Leftovers remain for 3-4 days in the refrigerator and can be reheated in the microwave or on the stovetop.

If you wish to freeze it, it will work fine. Simply cool completely before freezing, then thaw overnight in the refrigerator before reheating on the stovetop until well hot.
