Vegan Gluten Free Banana Bread

Ingredients

  • 3 bananas plus 1 halved lengthwise for garnish
  • 1 cup almond milk
  • 1/3 cup coconut oil melted
  • 2 teaspoons vanilla
  • 2 tablespoons ground flaxseeds
  • 1 1/2 cups all purpose gluten-free flour (I used Krusteaz brand)
  • 1 cup almond flour
  • 1 cup organic cane sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  • Preheat oven 375 degrees F. Line an 8-inch long baking pan with parchment paper and spray or brush with oil. Set aside.
  • Mash ripe banana and set aside in a bowl.
  • Combine almond milk, coconut oil, vanilla, and ground flaxseeds in a medium bowl and set aside.
  • In a large bowl, mix gluten-free flour, almond flour, sugar, baking powder, and salt. Add almond milk mixture and mix until combined. Fold in mashed bananas and mix until fully incorporated.
  • Scoop batter in a prepared baking pan, place 1/2 a banana peeled, and cut lengthwise on top of the batter
  • Bake banana bread in the preheated oven for 70-90 minutes or until a toothpick inserted in the center comes out clean. Remove pan and place on a wire rack to cool for 10 minutes.
  • Remove the banana bread from the pan and allow it to cool completely on the wire rack. Brush with maple syrup or agave. Slice and enjoy!
