I love to bake gluten free vegan Banana Bread on the weekends. It is a childhood tradition that gives me that cozy comfort feeling. My family enjoys it too. I decided to share another version with you that’s different from the one in my cookbook.

Health Benefits Of Banana 

Bananas have many health benefits and can be consumed for breakfast, lunch, or dinner. Some of the nutrients contained in bananas are potassium, vitamin C, vitamin B6, magnesium, copper, fiber, and protein.

Eating bananas is also a good way to maintain blood sugar levels, aid with digestion, help to maintain heart health, assist with weight loss, and are easy to include in your diet.

Bananas are also very filling and will prevent you from feeling hungry for several hours. This will significantly assist those who are formulating weight loss plans. In addition, a medium banana contains only 102 calories.

Bananas also contain bioactive plant compounds such as dopamine and catechin. The dopamine which comes from bananas acts as an antioxidant and the catechin can assist with reducing the risk of heart disease.

I love that a recipe as delicious as this gluten-free banana bread can also pack a nutritious punch.

Flaxseed Nutrition Facts

Flaxseeds are sprinkled with quite an assortment of vitamins and minerals, along with being a great source of fiber and fats. 

However, their most notable claim to fame is the sheer amount of omega-3 fatty acids that they contain, which is usually found in fish and is quite rare to find from plant-based sources.

This makes them come very high on my list of important foods for every vegan pantry.

Most importantly for this banana bread, they can produce a wonderful gel that is the perfect egg substitute for any recipes that require a binding agent. You can find ground flaxseeds in most of my other baked goods as well, savory or sweet.

How Ripe Should Bananas Be For Banana Bread?

This is an easy question, as ripe as possible! I actually prefer my bananas for this recipe to be bordering on overripe. Bananas with lots of black spots that the kids won’t eat are the perfect candidate.

Not only is banana bread a great way to get rid of bananas that are nearing the end of their shelf life, it also adds natural sweetness to your banana bread.

These sweeter bananas have a wonderfully caramel-esque flavor that beautifully comments the spices in this banana bread recipe.

Don’t be scared of those spotted bananas. Even totally black bananas are ok! Once no mold is present, it will taste DELICIOUS.

Can You Use Frozen Bananas For Banana Bread?

Yes! I would recommend using bananas that you have frozen yourself so that you are sure they were ripe, but any will do in a pinch.

Thaw the bananas in the refrigerator in a covered bowl or freezer bag, and do not drain any juices. Use them in your banana bread for the flavor and moisture they provide.

What To Add To Banana Bread?

  1. Nuts – Walnuts, pecans, hazelnuts.
  2. Dried Fruits – chopped dates, raisins, pineapple.
  3. Fresh Fruits – strawberries, blueberries, pineapple.
  4. Peanut butter, coconut flakes, carob/chocolate chips

  • Almond Milk
  • Coconut Oil
  • Vanilla
  • Ground Flaxseeds
  • All-Purpose Gluten-Free Flour
  • Almond Flour
  • Cane Sugar
  • Baking Powder
  • Salt
  • Bananas

How To Make Gluten Free Vegan Banana Bread?

To make banana bread, combine almond milk, coconut oil, vanilla, and ground flaxseeds in a bowl and set aside.

Mashed bananas and set aside. In a large bowl, mix gluten-free flour, almond flour, sugar, baking powder, and salt.
Add almond milk mixture to the flours and mix until batter is well combined and smooth.

Fold in the mashed banana. Scoop batter in a prepared baking pan, place 1/2 a banana peeled and cut lengthwise on top of the batter, and bake at 375 degrees F. for 70 minutes or until a toothpick inserted into the center comes out clean.

Transfer to a wire rack and allow to cool in the pan for 10 minutes, remove from pan and allow to completely cool before slicing. Brush with maple syrup or agave.

Can You Freeze Banana Bread?

I absolutely love freezing banana bread. It works beautifully and tastes like it’s freshly made. I like to buy bulk bananas on sale and either freezes them for smoothies, or use them to make banana bread, and freeze them for later usage.

Frozen banana bread is great to have on hand for quick breakfasts, especially for holidays if you have guests staying with you.

Make sure the banana bread is completely cool, then wrap in cling film, then foil, then place in a freezer bag. Having these multiple layers protects your banana bread from freezer burn for longer.

The best way to thaw banana bread evenly is to let it thaw at room temperature for a few hours or in the refrigerator for a day, then heat the whole loaf or slices in a conventional oven, toaster oven, or air fryer until warm to the touch.

  • 3 bananas plus 1 halved lengthwise for garnish
  • 1 cup almond milk
  • 1/3 cup coconut oil melted
  • 2 teaspoons vanilla
  • 2 tablespoons ground flaxseeds
  • 1 1/2 cups all purpose gluten-free flour (I used Krusteaz brand)
  • 1 cup almond flour
  • 1 cup organic cane sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt


  • Preheat oven 375 degrees F. Line an 8-inch long baking pan with parchment paper and spray or brush with oil. Set aside.
  • Mash ripe banana and set aside in a bowl.
  • Combine almond milk, coconut oil, vanilla, and ground flaxseeds in a medium bowl and set aside.
  • In a large bowl, mix gluten-free flour, almond flour, sugar, baking powder, and salt. Add almond milk mixture and mix until combined. Fold in mashed bananas and mix until fully incorporated.
  • Scoop batter in a prepared baking pan, place 1/2 a banana peeled, and cut lengthwise on top of the batter
  • Bake banana bread in the preheated oven for 70-90 minutes or until a toothpick inserted in the center comes out clean. Remove pan and place on a wire rack to cool for 10 minutes.
  • Remove the banana bread from the pan and allow it to cool completely on the wire rack. Brush with maple syrup or agave. Slice and enjoy!
