Ingredients

  • 1 pound mustard greens washed and chopped finely
  • 1 tablespoon extra-virgin olive oil
  • 1/2 onion
  • 4 garlic cloves minced
  • 1/2 red bell pepper chopped
  • 1 medium tomato chopped
  • 1 teaspoon Creole Seaoning
  • 1/2 teaspoon smoked paprika
  • 1/2 cup water
  • salt to taste

Instructions

  • Heat oil in a large saucepan on medium-high.
  • Add onion and cook until soft, about 3 minutes.
  • Stir in bell pepper and garlic and cook for a minute.
  • Add tomatoes, creole seasoning, smoked paprika, 1 bouillon cube, pinch of salt if needed, and cook stirring for a minute.
  • Stir in mustard greens until wilted.
  • Add liquid, cover the saucepan, and reduce to simmer for 20 minutes or until the mustard green is tender.
