Vegan pinwheels are a delicious addition to your list of favorite snacks. These are made from fresh vegetables, a creamy hummus wrapped in a homemade spinach wrap. These pinwheels are healthy, delicious, refreshing, and a great snack you can enjoy at home or at work.

Ingredients

  • 4 spinach wraps
  • 1 10-ounce tub of hummus, or homemade
  • 2 cups of purple cabbage cut into strips
  • 1 large red pepper diced
  • 2 medium carrots shredded

Instructions

  • Place a spinach wrap on a working station of a large plate.
  • Spoon 2 tablespoons of hummus on it and spread across the surface of the wrap.
  • Place 1/2 cup shredded cabbage, 1/4 cup carrots, and1/4 cup diced bell pepper all across the wrap's surface.
  • Start rolling the wrap from one end tightly until the opposite end is reached.
  • Place the wrap on a parchment-lined baking tray seam side down, and place the tray in the refrigerator for about 2 hours.
  • Take the wraps out of the refrigerator and trim the ends. Using a sharp knife, cut the wraps into equal sizes.
  • Arrange the pinwheels on a platter and serve.
