Preheat oven 400 degrees F. Spray and lightly brush baking sheet covered with parchment paper with oil. Set aside.
Place walnuts in a food processor and process until finely ground.
Add the remaining ingredients, breadcrumbs, mashed tofu, Bragg’s Liquid amino acid, nutritional yeast flakes, tapioca starch, onion powder, garlic, salt, Italian seasoning, fennel, and sage.
Process until a smooth thick batter is formed.
Divide the sausage batter into 12 equal pieces and form it into patties.
