Over the past few weeks, I’ve wanted to make this recipe, and after giving it a try, I’m happy with the results.

If you’re vegan or attempting to eat more plant-based, this vegan breakfast “sausage” will satisfy your savory morning protein appetite like no other. Let’s get this party started!

To make these delectable vegan sausage patties, you’ll require only a few simple ingredients. The exact measurements are given below.

Ingredients

  • Extra-firm tofu
  • Gluten-free breadcrumbs
  • Walnuts
  • Bragg’s liquid aminos
  • Nutritional yeast flakes
  • Tapioca starch or cornstarch
  • Onion powder
  • Garlic
  • Salt
  • Italian seasoning
  • Fennel
  • Sage
  • Oil for frying

Directions

  1. Place walnuts in a food processor and process until finely ground.
  2. Add the remaining ingredients, breadcrumbs, mashed tofu, Bragg’s Liquid amino acid, nutritional yeast flakes, tapioca starch, onion powder, garlic, salt, Italian seasoning, fennel, and sage.
  3. Process until a smooth thick batter is formed.
  4. Divide the sausage batter into 12 equal pieces and form it into patties.
  5. Place oil in a large, heavy skillet over medium-high heat. Cook patties until golden brown, about 3 minutes. Flip them and cook them for another 3 minutes. Serve immediately

Leftover Storage

The leftovers can be kept for 3-4 days in the refrigerator, in an airtight container. Microwave them on 50% power for a few minutes to warm them up.

Recipe Tips

  • Feel free to add or substitute other herbs or spices.
  • More breadcrumbs can be added if the dough is too sticky. It’s best to add some water if it’s too dry.

Ingredients

  • 1 package extra-firm tofu drained
  • 1 cup breadcrumbs
  • 1 cup walnuts or pecans, finely chopped
  • 1/4 cup Bragg liquid aminos
  • 2 tablespoons nutritional yeast flakes
  • 2 tablespoons tapioca starch or cornstarch
  • 1 tablespoon onion powder
  • 2 cloves garlic minced
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon fennel
  • 1/4 teaspoon sage
  • 1 teaspoon salt
  • Oil for pan-frying

Instructions

  • Preheat oven 400 degrees F. Spray and lightly brush baking sheet covered with parchment paper with oil. Set aside.
  • Place walnuts in a food processor and process until finely ground.
  • Add the remaining ingredients, breadcrumbs, mashed tofu, Bragg’s Liquid amino acid, nutritional yeast flakes, tapioca starch, onion powder, garlic, salt, Italian seasoning, fennel, and sage.

  1. Made these patties for breakfast. They are truly delicious. I would suggest to make sausage batter without salt first and try it and if it is not salty enough add a little bit of salt.

  2. Can these patties be frozen? Can they be fried in the air fryer so that we don’t need oil? I am excited to try these!

    1. Yes they freeze very well. Cook them for 10-15 minutes (depending on the size) at 375 Fahrenheit turning halfway.

    The patties are delicious. The only problem is that I didn’t see measurements listed. Being that I cook a lot I looked at the proportions in the pictures and guessed. It turned out rather well. But it would be great if you listed amounts unless I am missing something!!
