Homemade Tostadas

  • 6 corn Tortillas
  • Oil for brushing
  • salt

Soycurls

  • 4 ounces Butler Soy Curls™ (about half a package)
  • 1 teaspoon Bragg's liquid aminos
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon nutritional yeast flakes
  • 1/4 teaspoon chili powder or cayenne pepper
  • Salt to taste

For The Toppings

  • 1 recipe for refried beans or 1 can store-bought
  • 1 cup lettuce sliced
  • 1 avocado chopped
  • 1 medium tomato chopped
  • 1/3 cup red onion chopped
  • 1/4 cup jalapeno slices
  • 6 tablespoons Sour Cream or store-bought
  • cilantro for garnish

Instructions

To Make Tostada Shells

  • Preheat oven to 400 degrees Fahrenheit. Brush tortillas with oil and sprinkle with salt. Place tortillas on a baking sheet, and bake for 10 minutes, turning halfway, until tortillas are lightly brown and crispy.
  • Remove from oven and allow to cool. Now they are ready to add your favorite tostada toppings, or you can store them into a ziplock bag or airtight container for 3 days.

To Prepare The Soycurls

  • Soak soy curls in warm water for 10 minutes. Squeeze out excess liquid, and add Bragg's Liquid Aminos, cumin, onion powder, garlic powder, oregano, yeast flakes, cayenne, and salt.
  • Heat oil in a large skillet over medium-high, and add seasoned soy curls and cook until they become brown on the edges and slightly crispy, or about 6 minutes. Set aside.

To Prepare The Tostadas

  • Heat refried beans in a saucepan on medium heat, stirring until warm, or about 4 minutes. Spread refried beans over tostada shells evenly. The refried beans act as a glue for the other toppings to stick to.
  • Top with soy curls, lettuce, avocado, tomato, red onion, and jalapeno, and drizzle with the sour cream. Garnish with cilantro and lime.
