Homemade Coconut Butter
Making your own coconut butter is very easy, and it can be ready in minutes by using a food processor or high speed blender. I refuse to buy coconut butter in the store, seeing as it is so expensive, and instead I decided to make my own. I love to use it instead of coconut oil to make raw cheesecakes and love it added to my curries. Coconut butter is made from the meat of the coconut. It’s a whole food compared to coconut oil, which is just the pure extracted oil (fat).
Coconut butter has more nutritious value than coconut oil, plus you are getting protein, additional minerals and vitamins, and fiber. Coconut butter contains lauric and caprylic acids, which boost the immune system and provide antibacterial, anti-viral and anti-fungal benefits. It also contains medium chain fats, that are immediately used by the body to provide quick energy. The fiber in coconut, like other dietary fibers, will lower your risk for heart disease, prevent cancer, lower blood glucose, improve intestinal health, and expel worms.
Anyways, this is not really a recipe because the only ingredient is actually coconut. That's it!
You'll need unsweetened and dried coconut shreds or coconut flakes.
1. Place 4 cups coconut shreds/flakes in a food processor or high speed blender.
2. Process or blend for 15-20 minutes in a food processor or 8-10 minutes in a blender.
3. You'll need to stop the machines and occasionally scrape sides of the blender or food processor.
4. Place the butter in a glass jar and allow to cool. Cover and store at room temperature.
From now on I have decided to post recipes that do not contain oils. I have decided to take a more therapeutic approach in my recipes, since I'm now under heavy conviction that cooking with oil is actually not healthy and isn’t necessary. Lately I have been approached by more people with chronic diseases, such as heart disease, cancer, and diabetes, to do personal cooking classes and I find that removing oil from my recipes will do more to restore one’s health. Eating olives would be better for your health than olive oil.
