Quinoa Salad (Gluten Free)

Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable stock or water
  • 1 cucumber or zucchini, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sweet corn
  • 1/2 avocado chopped
  • 2 limes, squeezed
  • 1 teaspoon maple syrup or agave
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt or to taste
  • 1 teaspoon cumin powder
  • 1/4 cup cilantro chopped
  • 2 spring onion, finely chopped

Directions:

Rinse quinoa in a fine mesh sieve. Bring water or vegetable stock and quinoa to boil into a saucepan. Reduce heat to low, cover and simmer until quinoa is tender, about 15-20 minutes. Set aside to cool. In a small bowl, combine lime juice, olive oil, maple syrup, salt, cumin, cilantro and spring onion. Combine quinoa, cucumber, tomatoes, sweet corn, and avocado in a bowl. Pour dressing over quinoa salad and toss to coat. Serve immediately.
