Quinoa Fried Rice

After having some leftovers from my Cilantro Lime Quinoa recipe, I decided to use it to prepare Quinoa Fried Rice. It came together so quickly and it was so flavorful my hubby enjoyed every bit of it. 

This is the perfect one-pot recipe that you can use fresh or frozen veggies along with some fried tofu. If you don’t have quinoa then you can also make my Pineapple Fried Rice recipe.

Quinoa Fried Rice

I would say this is one of the recipes that can be made mostly with ingredients you already have on hand.

You can easily grab a bag of frozen mixed vegetables and a can of pineapple tidbits and with a few other ingredients, you have an over-the-top delicious meal.

This is so great for busy working moms, to prepare a fun and quick meal that the entire family will enjoy.

Quinoa Fried Rice Ingredients

  • Bragg’s Liquid Aminos or Soy Sauce
  • Roasted Sesame Oil – for flavor. 
  • Cooking Oil – use your favorite oil for sauteing, I like avocado, coconut, or grapeseed. 
  • Garlic – minced garlic for flavor, make sure you watch it and stir while cooking so that your minced garlic won’t burn.
  • Ginger – using fresh ginger is best in this recipe.
  • Green Onion – use both green and white parts, reserve some for garnishing at the end.
  • Carrots – peel and dice carrots into small pieces so that they cook easily when stir-frying yet remain crunchy. 
  • Green Peas – use fresh or frozen green peas.
  • Corn Kernels – use fresh, canned, or frozen sweet corn. 
  • Cooked Quinoa – see How To Cook Quinoa
  • Pineapple – use fresh, canned, or frozen. 
  • Sauteed Tofu – I saute tofu cubes with Bragg’s Liquid Aminos until golden brown.

How To Make Quinoa Fried Rice?

  1. Combine Bragg’s Liquid Amino and roasted sesame oil and set aside.
  2. Heat oil in a large skillet over medium-high. Add garlic, ginger,  and green onion. Cook, until fragrant for about 1 minute.
  3. Add carrots and cook for about 1-minute stirring. 
  4. Stir in green peas, corn, and stir. 
  5. Add the cooked quinoa, pineapple, tofu, and stir well to combine. 
  6. Stir in the Bragg’s Liquid Amino and sesame oil mixture. 
  7. Garnish with green onion slices and serve immediately!

Quinoa Fried Rice

This healthy pineapple-fried quinoa is quick and easy to prepare. It is definitely a great way to use up leftover cooked quinoa, and the burst of sweet and savory is a delight to the taste buds.

Equipment

Ingredients

  • 1 tablespoon Bragg’s liquid aminos
  • 1 teaspoon roasted sesame oil
  • 1 tablespoon oil (avocado, grape seed, or coconut oil)
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 2 stalks green onions chopped
  • 1 medium carrot peeled and dice finely
  • 1/2 cup green peas
  • 1/2 cup corn kernels
  • 2 cups cooked quinoa
  • 1 cup pineapple tidbits fresh or frozen
  • Sauteed Tofu Cubes (optional) Ingredients below

For The Sauteed Tofu

  • 8 ounces extra-firm tofu drained, pressed and cut into 1/2 inch cubes
  • 1 tablespoon Bragg’s liquid aminos
  • 1 tablespoon coconut oil or your favorite

Instructions

  • Combine Bragg’s Liquid Amino and roasted sesame oil and set aside. If you are adding sauteed tofu to your pineapple fried quinoa then prepare it and set aside.
  • Drain tofu and squeeze to remove excess liquid, cut tofu into 1/2 inch cubes. Place tofu in a bowl and toss with Bragg’s Liquid Aminos.
  • Heat oil in a large skillet over medium heat, add tofu cubes and cook until golden brown and crisp, about 3-5 minutes, flip tofu, and cook until the other side is golden brown. Remove from skillet and set aside on a plate.

To Prepare The Pineapple Fried Quinoa

  • Heat oil in a large skillet over medium-high. Add garlic and ginger, cook, until fragrant about 1 minute.
  • Add green onion and stir. Add carrots and cook for about 1-minute stirring.
  • Add green peas, corn, and stir.
  • Add the cooked quinoa, pineapple, tofu, and stir well to combine.
  • Stir in the Bragg’s Liquid Amino and sesame oil mixture.
  • Garnish with green onion slices and serve immediately!
