This recipe is a perfect fusion of Indian spices and flavors with a modern twist on traditional curries. It can be used to make vegetables or lentil curries such as Jamaican-Style Chickpea Curry, Sri Lankan Eggplant Curry, Pea Potato Curry, or Tofu Curry With Cauliflower.

  • Water
  • Onion: Whenever making curry, this is a crucial component! Feel free to substitute red, yellow or white onions for the recipe, though I used yellow onions.
  • Tomatoes: Tomatoes also set a base for the curry sauce. Besides, they also add a tangy flavor to the dish and lift the flavors. You can use either fresh tomatoes or canned tomatoes. You may use tomato paste instead.
  • Green chilies: Rich in antioxidants, bring the perfect amount of heat and fragrance to your curry sauce!
  • Garlic cloves: The garlic flavor in curries are to die for!
  • Cayenne Pepper: It imparts a more neutral “peppery” flavor to this curry sauce.
  • Garam masala powder: Adds the perfect aroma and flavor to any curry dish. You can easily find this at any Indian grocery store, it’s a powder mix of all the dry spices.
  • Coriander powder: Coriander powder gives a subtle beautiful aroma and taste.
  • Curry powder: The base of this curry sauce is curry powder. The most amazing flavor-enhancing ingredient without which your curry will be incomplete. It incorporates hot and smokey elements into this dish, which enhances its flavor. Invest in some top-notch curry powder for greater flavor.
  • Salt: Remember to add salt. I used Himalayan pink salt, however, any salt such as sea salt, and table salt can be used.
  • Avocado oil: Any plant-based oil can be used. I used avocado oil for making this curry simmer sauce because of its numerous health benefits.

How To Make Curry Simmer Sauce?

  1. First of all peel the onions and garlic.
  2. In a large pot, add half a liter of water.
  3. Now add all the peeled onions, garlic, onions, and green chilies.
  4. Boil all the vegetables on a medium flame for about 15 minutes or until completely soft.
  5. Now blend all the vegetables with a hand blender or in a regular blender.
  6. Set the blended veggie purée aside.
  7. Take a separate bowl, and add cayenne pepper, coriander powder, garam masala powder, curry powder, and salt.
  8. Add 5-6 tablespoons of water to the dry spices and make a paste.
  9. Keep the paste aside.
  10. Now in a separate pan, heat 6 tablespoons of avocado oil and add the spice paste.
  11. Cook the spice paste for about 30-40 seconds and add in the blender purée of vegetables.
  12. Give it a good mix and cover.
  13. Cook it on low flame for about 20-25 minutes or until oil leaves the masala.
  14. Be careful while cooking the masala, as it bubbles so it’s better to cook it covered.
  15. Let the mixture cool completely, and transfer to glass bottle jars or air-tight containers.
  16. Use as needed. This ready-made gravy saves your time and effort in everyday cooking.

Storage Instructions

  • Transfer the mixture to glass bottles/jars or other airtight containers after letting it cool completely.
  • It is better to store it in a freezer in small containers, so for every meal, you pop one container out of the freezer and prepare your dish.
  • It lasts up to 6 months in the freezer.
  • Refrigerator life can be 5-6 days, make sure to use air-tight sterilized bottles or air-tight containers.
