Jicama Salad Recipe
- 1 medium jicama
- ½ cup raisins
- 1 small can of pineapple tidbits (drain it)
- ½ cup vegan mayonnaise
- 1 tbsp. any sweetener (I used agave)
How to Make Jicama Salad?
- Rinse the jicama well. Peel the jicama, and then shred it using a box grater or food processor.
- In a medium bowl, toss the grated jicama with mayo and sweetener and gently combine them.
- Add in the raisins and pineapple in a bowl. Stir the salad until the ingredients are fully combined.
- You can immediately serve the jicama pineapple salad, or cover it and put it in the fridge to chill thoroughly. This delicious salad will stay fresh in the fridge for up to 6 hours.
