You only need the following ingredients:

  • Garlic – I love the flavor of garlic, you can omit it if you don’t. A pungent bulb that adds a distinct flavor and aroma to the dish, and is known to have several health benefits such as reducing inflammation, boosting immunity, and improving heart health.
  • Onion – Yellow, red, or white onion whatever you like. A versatile vegetable that adds sweetness and flavor to the dish, and is rich in antioxidants, vitamins, and minerals that promote overall health.
  • Paprika – A ground spice made from dried sweet peppers, which adds a mild, smoky flavor and a reddish color to the dish.
  • Salt –A mineral that enhances the flavor of the dish, and is essential for various bodily functions such as regulating fluid balance, nerve transmission, and muscle function. I normally use Himalayan pink salt, but you can use any salt you like.

  • Orange juice – A citrus fruit juice that adds a tangy, sweet flavor and is rich in vitamin C, folate, and potassium, which support immune function, cell growth, and blood pressure regulation. I suggest using freshly squeezed orange juice.
  • Maple Syrup: A natural sweetener made from the sap of maple trees, which adds a distinct, rich flavor and is a good source of antioxidants, minerals, and vitamins.
  • Soy Sauce: A fermented sauce made from soybeans, wheat, and salt, which adds a savory, umami flavor and is a rich source of protein, minerals, and vitamins. Use tamari with a lower sodium content or  Bragg’s liquid aminos for a gluten-free version. Use coconut aminos if soy-free.  
  • Cornstarch: A fine white powder made from corn that acts as a thickener in the sauce, and is gluten-free and low in calories.
  • Sesame Oil: An aromatic oil made from toasted sesame seeds, which adds a nutty flavor and aroma to the dish and is rich in healthy fats and antioxidants.
  • Ginger: A root spice that adds a pungent, slightly sweet flavor and aroma, and is known to have several health benefits such as reducing inflammation, aiding digestion, and improving immunity.

  1. In a wok, heat olive oil.

  1. Use a non-stick pan or wok for stir-frying to prevent the sauce from sticking to the bottom.
  2. Don’t slice the carrots and zucchini too thinly or too thickly.
  3. Add any veggies you like.
  4. Don’t overcook the veggies. There should be a crunch in them.
  5. You can adjust the spice level by adding some red pepper flakes, depending on your taste.
