- Stir to make sure you entirely submerge all the tamarind pods in water. It is natural for the ginger to float.
- Cover with plastic wrap for about 30 minutes. This will allow the tamarind to soften and release the flavor and nutrients from the ginger without boiling.
- Using a spoon or whisk, whip the tamarind mixture from the bottom up to release any seeds.
- Place a strainer over a clean pitcher and use the filter and a spoon to separate the seeds from the tamarind pulp.

Tamarind juice
Ingredients
- 1 pound sweet tamarind pods deshelled

I also used to make tamarind drink, buy the prepared drink , occasionally buy from market vendors, and also collect tamarind pods for eating from any ‘sweet tamarind ‘ tree I was so fortunate to come across. Sweet tamarind trees are one of the many things I miss from Jamaica!
