Thai Kale Salad with Creamy Peanut Sauce

I have been making lots of salads lately, this one is for my husband because peanut and I aren’t friends and I’m staying away from sweeteners. This Thai Kale salad is a lovely salad with the addition of bell peppers and carrots are perfect for company. I have been sharing recipes for someone on the first phase of candida diet. This recipe can be easily tweaked to be candida friendly by, substituting the peanuts for sunflower seeds. For the peanut sauce, substitute the peanut butter for sunflower butter or your favorite nut butter remove the coconut palm sugar and use coconut aminos only.

Talking about company, we are so excited because we have a new puppy called Macho, he is a big puppy and for a 6 month old we have to remind our selves that he is not that old. He is an Italian mastiff and he is so playful, loveable and adorable. He just loves to be around us and I can tell he is not a loner.He is the perfect companion for Daevyd, who looks forward to spending time with his new pet. By the time the day is finished, Daevyd is ready to  go to bed.

Ingredients:

  • 8 ozs kale, destemmed and chopped
  • 1 cup carrot, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow pepper, thinly sliced
  • 1 spring onion, finely chopped
  • 1/4 cup peanuts for garnish
  • For Creamy Peanut Sauce
    • 1/4 cup creamy peanut butter
    • 1/4 cup water
    • 3 tablespoons lemon juice
    • 2 tablespoons coconut palm sugar or sweetener of choice
    • 1 tablespoon coconut aminos or Bragg’s liquid aminos
    • 1 tablespoon olive oil
    • 4 cloves garlic
    • 1/2 inch fresh ginger
    • 1 teaspoon sesame oil
    • 1/2 teaspoon sea salt

Directions:
Arrange salad in a bowl, toss with peanut sauce and garnish with peanuts and serve.

  5. This sounds amazing, but do you have the nutrition information for it? My daughter counts macros and without knowing the carbs, protein etc she won’t eat it. :)

      I’m happy you love my recipe. I personally don’t believe in calorie counting. I dedicated this website in developing recipes that are plant based, gluten-free. low fat, and refined sugar free, that are delicious and flavorful. I’m cook, health coach and not a nutritionist. I believe in making healthier choices in order to loose weight, because calorie counting doesn’t mean you are eating healthy nutritious foods. I agree that eating less does lead to weight loss but that doesn’t account for eating healthy foods. One can eat less but eat a bag of potato chips and a soda as their only meal for the entire day. They will end up way below their caloric need but their choice was poor.
      Eating should be fun, not rigid and full of stress. Your mood affects the way food is absorbed. To know if a recipe is healthy look at the recipe or label and see if it contains lots of processed foods or if it contains more foods that are in their natural state. Make better food choices by eating foods that are less processed.
      There are many sites that you can use to see the calorie in my recipes. However just to note that these data aren’t accurate,they are only estimations. Nutrient content of the foods will vary from the location they were grown in, the soil, transportation etc. Individual metabolism of the food need to be considered as well.

  6. I am not fond of peanuts and I detest peanut butter (usually). I wonder if this recipe would work if I substituted cashews or almonds for the peanuts and cashew or almond butter for the peanut butter?

    1. You can definitely substitute the peanuts for cashews or sunflower seeds. You can substitute the peanut butter for cashew or almond butter, even sunflower butter will do. I actually wrote that in the post.
