Zucchini Pasta with Avocado Dressing
I ended up buying a vegetable spiralizer and I’m so happy I did. My children had fun making the zucchini noodles so I don’t even know how to use the machine. I enjoyed this dish so much I will be making it sometime in the coming week. I served the spiralized zucchini with avocado sauce – because I really love it. You can serve it with a tomato sauce or a vegan cheese sauce. Zucchini pasta and avocado dressing is excellent for someone on Phase 1 of the candida diet.
Ingredients:
- 2 medium zucchini spiralized
- 1 avocado, peeled and pitted
- 1/4 cup extra-virgin olive oil or almond milk
- 1/4 cup basil leaves
- 1 tablespoon lemon juice
- 1 clove garlic
- Pinch cayenne pepper
- 1/4 teaspoon sea salt
- Garnish chopped basil leaves and cherry tomatoes
Directions:
Using a spiralizer or julienne peeler, turn zucchini into noodles. Set aside in a bowl. Place all ingredients in a blender or food processor and process until smooth. Serve avocado dressing with zucchini noodles, garnish with basil leaves and cherry tomatoes.
