Gluten-Free Breadsticks
These light garlicky and fluffy gluten-free breadsticks are not just easy to make but taste just right. Coated with vegan garlic butter mixture, these breadsticks are the perfect appetizer and side dish for your holiday dinner menu. This recipe is easy to make and offers restaurant-quality breadsticks at home!
These gluten-free vegan breadsticks are one of my best accomplishments in gluten-free baking. After many trials, I finally came up with a winning recipe. It is definitely a labor of love. I intended to publish my breadstick recipe for the Christmas holidays, even though the recipe was good, I felt that I could make it better, so I delayed and this version is spot on.
My assistant chef Jean said these breadsticks were reminiscent of Olive Garden Breadsticks, except they were way better because they are homemade.
These Italian breadsticks are made from yeasted pillowy soft gluten-free flour. Baked to perfection, they are drenched with vegan garlic butter and eaten dunked in marinara sauce. It is best to use an electric mixer with a pair of paddles, however, you can make the recipe using your hands.

Ingredients breakdown
For the dough:
- Millet flour: Millet flour is a fine-textured flour made from millet grain. Millet looks like wheat, but it is gluten-free. Therefore, it is perfect for this recipe. When baked, the flour offers a light texture. Furthermore, it has a nutty and slightly sweet flavor. It is rich in fiber, vitamins, and minerals.
- Brown Rice flour: We are using two kinds of flour for this recipe. The second is brown rice flour. Brown rice flour is rich in fiber and offers several benefits. You can easily Make Brown Rice Flour at home by grinding brown rice in a high-speed blender.
- Tapioca starch: Tapioca starch comes from cassava plant roots, so it is a plant-based ingredient. Moreover, it is also a gluten-free ingredient and makes the bread dough lighter.
- Arrowroot starch: Arrowroot starch is just the same as tapioca starch but comes from a different plant. It is also gluten-free and tasteless.
- Almond milk: You will need warm almond milk to proof the yeast. It is plant-based milk perfect for this recipe. You can use any other plant-based milk as well.
- Yeast: I have used active dry yeast for this recipe. You can find it in every grocery store. When buying yeast, look for the expiration date. Don’t buy yeast whose expiration date is closer. Yeast acts with the ingredients and helps in raising the dough. It makes the dough airy resulting in soft and perfectly baked breadsticks.
- Sugar: Sugar is a crucial ingredient used in proofing yeast. I have used organic cane sugar for this recipe.
- Olive oil: Olive oil is just the right ingredient for making this recipe. It has a savory flavor and is loaded with nutrients and healthy fats.
- Apple sauce: Apple sauce is an amazing ingredient you can add to your desserts or dishes to bring in sweetness and warmth. You can easily find it at grocery stores. Furthermore, you can easily make it at home as well. All you need is to cook some apples in sugar, water, and lemon juice.
- Xanthan gum: Bread dough needs a binding agent that will bring all the ingredients together and give the final product a soft and light texture. When making regular bread, we use egg as a binding agent. If not, the gluten present in the all-purpose flour (commonly used for bread) also acts as a binding agent. Since we are not using these two ingredients in our gluten-free and vegan breadstick recipe, we will need to add xanthan gum for binding purposes. It is a food additive that fulfills the need for gluten in bread and binds everything together.
- Baking powder: Baking powder makes the bread fluffy and airy from the inside. You can’t bake bread without baking powder.
- Salt: Add salt to taste to adjust the flavor of these breadsticks.
For Vegan Garlic Butter Glaze
- Vegan butter: you can’t make garlic butter without butter, can you? You can use any vegan butter from this recipe. Nut butter work just fine too.
- Garlic powder: Garlic powder offers the garlicky goodness we all love. If you don’t like garlic pieces in every bite like me, use garlic powder. It gives you the amazing garlicky flavor without any bits or pieces of garlic.
- Salt: add salt to balance out the savory flavors.
How to make vegan Bread Sticks?
Here are a few simple steps that you have to follow to make delicious vegan and gluten-free breadsticks:
Step 1: The first step of making any bred is proofing the yeast. So, start with pouring warm almond milk into a bowl. Add yeast and sugar and give it a gentle stir. Let the mixture sit for about 5 to 7 minutes until you see foam on the top. It means the yeast is perfectly working and is activated.
Step 2: Meanwhile, add Millet flour, brown rice flour, tapioca starch, arrowroot starch, baking powder, xanthan gum, and salt in a large bowl and mix well. Add applesauce, olive oil, and activated yeast. Mix well until the mixture forms a dough. It will be soft but not too sticky at all. If you find it too sticky, rub oil on your hand.
Step 3: Once you shape the dough in a ball, place it in a bowl and cover it with a kitchen towel. Place it in a warm and dry place for at least an hour until the dough is doubled in size. I like placing the dough in my oven by keeping the light on.
Step 4: Once the dough has risen, take it out of the bowl and place it on a floured workstation and roll it into a rectangle. Cut the rectangle into 12 equal strips. Twist each strip like a rope and put it on a parchment-lined baking tray.
Step 5: Cover the breadsticks and leave them for 20 to 30 minutes so that they rise again.
Step 6: Meanwhile, in a small saucepan, melt vegan butter. Add garlic powder and salt to the melted vegan butter and mix well. Brush the garlic butter mixture into the breadsticks and place the baking tray in a preheated oven at 400 degrees F for about 20 minutes or until they turn golden brown. Enjoy!
Tip to keep in mind when making vegan breadsticks
Here are a few things you should keep in mind when making vegan, gluten-free breadsticks.
- Make sure you activate the yeast. Yeast activation tells us if the yeast is of quality or not. Also, it helps in the proper rising of the dough.
- Make sure you mix the yeast in warm almond milk. It shouldn’t be simmering hot; otherwise, the yeast will die instantly.
- You can use avocado oil instead of olive oil.
- For more flavor, add garlic powder and Italian seasoning to the bread dough.
- The dough should be soft but not too sticky. If you find the dough sticky, add more brown rice flour or add oil to your hands when handling the dough. If it seems dry, add more almond milk.
- For quick and mess-free kneading, use an electric standing mixture using the paddle attachment.
- You can mix dried herbs in the garlic butter mixture as well.
How to store vegan breadsticks?
Once the breadsticks are completely cooled, place them in ziplock bags or covered containers. They will last for up to 3 days. Freeze them for up to 3 months.

- 1/4 cup Vegan Butter (I used Earth Balance Buttery Spread)
- 1/2 teaspoon garlic powder
- Pinch of salt
Instructions
- First of all, proof the yeast. For that, pour warm almond milk into a bowl. Add yeast and sugar and give it a gentle stir. Let the mixture sit for about 5 to 7 minutes until you see foam on the top.
- Meanwhile, add Mallet flour, oat flour, tapioca starch, arrowroot starch, baking powder a ground flaxseeds, xanthan gum, and salt in a large bowl and mix well.
- Add applesauce, olive oil, and activated yeast. Mix well until the mixture forms a dough. It will be soft but not sticky at all.
- Once you shape the dough in a ball, place it in a bowl and cover it with a kitchen towel. Place it in a warm and dry place for at least an hour until the dough is doubled in size.
- Place the dough on a floured workstation and roll it into a rectangle.
- Cut the rectangle into 12 equal strips. Twist each strip like a rope and place it on a parchment-lined baking tray.
- Preheat oven to 400 degrees F.
- Cover the breadsticks and leave them for 20 to 30 minutes so that they rise again.
- Meanwhile, melt the vegan butter in a small saucepan over medium heat, add garlic powder and salt and mix well.
- Brush the garlic butter mixture all over the breadsticks
- Transfer the breadsticks into the preheated oven and bake for about 20 minutes or until they turn golden brown.
- Remove breadsticks and brush liberally with the remaining garlic butter mixture.
