How to Cook Perfect Millet?
Millet is a tasty and slightly nutty yellow grain. This gluten-free seed is extremely nutritious, and you can try it on your everyday diet. First, you need to select organic millet. Organic millets are more nutritious with fewer pesticides that will help your recipe taste delicious!
Before you buy millet, always sniff it, and if it smells musty or stale, you should avoid it. Always store millet in a cool and dry place. If you use a vacuum sealer to pack it, then you can store the millet without refrigeration.
It is best to presoak millet before you start cooking it. Simply soak it in 3 to 4 times the amount of water overnight or 6 hours at least. In this way, the grains will be more digestible, and you can get the nutrients from them. Also, you can cook your millet much sooner if you presoak them. But if you want to skip this process or forgot to soak them, you can simply clean them well in a mesh strainer and drain them.
For a nuttier flavor, toast the millet in a dry skillet first before cooking.

- 1 cup millet
- 3 cup water for soaking
- ½ cup water for cooking
- ½ tsp Himalayan pink salt or sea salt
No Presoak
- 1 cup millet
- 2 cup water for cooking
- ½ tsp Himalayan pink salt or sea salt
Steps to Cook It
Presoak
- Take the millet and mix it well with the water. Soak the millet for at least 6 hours.
- Drain the millet in a colander and clean well.
- Take a medium-sized pot, pour soaked millet on it and add water and salt.
- Start boiling the mixture and cover it with a lid. Set the temperature to low heat and simmer it for 10 minutes.
- Take out from heat and fluff it with a spoon or fork.
No Presoak
- Take the millet, clean it thoroughly in cold running water.
- In a medium pot, mix the cleaned millet with water and salt.
- Start boiling it and cover the pot with a lid. Keep the temperature low and simmer it for 15 minutes.
- After that, take out the pot from heat and keep it covered for 10 minutes.
- Fluff it out with a spoon or fork.

Every time I made millet, it was always too dry for my taste or not flavorful enough. So I just stopped making it.
I made some modifications as I wanted to do it in my Instant Pot and doubled the recipe. I did not soak but I did toast the millet before adding water.
Instead of 1/4 cup water, I did ¾ cup as I wanted it more moist and instead of 1 sprig thyme, I did 1 tsp dry thyme. I also added some more garlic. I cooked it on high pressure for 10 minutes and slow released it for another 10 minutes. It came out so perfectly moist and flavorful! If you don’t have fresh garlic or ginger, you can use the cubed frozen ones in the store, like I did. Thank you so much for this recipe!!!
