Flavorful Yuca With Garlic Sauce is a delicious vegan and gluten-free dish that is popular in Cuba, Puerto Rico and the Dominican Republic is easy to prepare and flavorful.
What Is Yuca Root?
Yucca, pronounced (Yoo-ka) is also known as yuca, cassava is a tropical starchy root vegetable that is an alternative to a potato. It has a white waxy flesh that is traditionally served boiled, baked or fried.
The skin is dark brown and rough, with white flesh, it is long and slender like an Asian sweet potato.

The starch of the tuber is also used to make tapioca starch that is used as a binder in gluten-free baking or a thickener in sauces.
Yuca root can be found in Latin American stores, the international section of most supermarkets. You can also purchase yuca that is already peeled and chopped in the freezer section of the grocery store.

Yuca is one of the plants that I grew up with, it is a perennial tree that keeps giving. My mom would harvest the tubers and use it to make starch that she would use to iron our clothes.
She also made a delicious cassava pone, similar recipe to my Sweet Potato Pudding. She also added cassava to soups.
How To Make Yuca With Garlic Sauce
This is easy to prepare but I promise you it tastes great, for someone on a gluten-free diet this yuca with garlic sauce recipe is a welcoming alternative.
There are different versions of this dish but all of them I have tasted are very delicious served as a side. I have seen vinegar being used, lemon, orange or lime.
Cut the top off the root, peel and discard the skin. Cut the white flesh int large chunks, about 2 inches long. Bring to boil in a large pot of water, reduce to simmer for 20 minutes or until fork tender. Meanwhile, prepare the garlic sauce/garlic mojo.
Remove yuca from heat, drain water using a colander, split the yuca pieces in half lengthwise and remove the tough core and place in a serving bowl.
Saute onion in olive oil in a large skillet on medium-high for 2-3 minutes, Add garlic, and cook stirring for 30 seconds.
Add lemon juice and salt and cook for 2 minutes for flavors to meld. Pour sauce red onions/garlic sauce over boiled yuca and serve.

Garlic Sauce
- 1/4 cup extra-virgin olive oil
- 1 medium red onion, cut into slices
- 4 cloves garlic, chopped
- 1/4 cup lemon or lime juice
- 1 teaspoon salt, or to taste
Instructions
- Place yuca in a large pot of cold water with salt and bring to boil. Reduce heat, cover pot and simmer for 20 minutes or until yuca is fork tender.
- Drain yuca and place in a serving bowl. In the meantime, heat oil in a large skillet on medium high, add onion and saute until soft, about 2-3 minutes. Add garlic and cook for 30 seconds.
- Add lemon juice and salt and cook for a couple minutes. Pour over yuca and serve.
