Icebox cakes are layered cakes that consist of whipped cream, wafers, or Graham crackers.

Traditional No-Bake Icebox is made from store-bought ingredients.

This recipe is made with homemade vegan whipped cream and Graham crackers.

As the ingredients are layered and placed in the refrigerator, they slowly soften and merge into a creamy, decadent cake that no longer resembles or has the texture of the original.

Why You’ll Love This Gluten-Free Vegan Cake?

This gluten-free vegan strawberry icebox cake recipe is amazing. It is arguably the finest cake flavor ever because it is:

  • Gluten-free: You won’t be able to tell the difference that this cake is gluten-free, I promise. It is airy and fluffy, and it goes nicely with the fruit and cream. To make this wonderful cake, you’ll need a gluten-free graham cracker.
  • Vegan: It tastes exactly like a great, traditional vanilla cake!
  • Dairy-free: This gluten-free icebox cake is made dairy-free by using coconut whipped cream instead of regular dairy cream to give it some structure and help it keep its shape. For this recipe, you’ll need to get an extremely thick vegan double cream, or else the cake won’t appear as gorgeous!
  • Strawberries: The more the better, in my opinion! But it can be customized with your favorite berries or other fruit.
  • Decoration: You can’t go wrong with a simple recipe, and I adore the simplicity of this cake’s design. Simply dress up the cake with cream and fresh fruit. You could even use edible flowers to add extra color and summerness to the cake if you’re feeling bold!

Origins Of Icebox Cakes

Icebox cakes were first introduced in America in the 1930s, when refrigerators, formerly known as iceboxes, became more common in people’s homes. After layering cookies or wafers with a creamy filling, the dessert was stored in the refrigerator overnight to set. As a result, a dessert that resembles a soft cake needs no baking time. It is the ideal refreshment during a heat wave.

We prepare this gluten-free dessert dish for Mother’s Day, the Fourth of July (for a festive twist, we substitute half of the strawberries with blueberries), and any other occasion. The icebox cake can be prepared a day or two in advance because it has to chill in the refrigerator overnight. When it’s time for dessert at your party or cookout, take it out of the fridge, slice it, and serve. OH SO Good!

Storing Suggestions For Strawberry Icebox Cake

In all honesty, eating this no-bake cake on the same day is truly wonderful. However, if there are any leftovers, store them in the refrigerator in an airtight container. They’ll stay fresh for three days. If you wait much longer, the cake will turn wet and soggy. If the cake pieces are too fragile to transfer, keep them in the same container. Just ensure that the cake is properly covered so that no further moisture is added.

Frequently Asked Questions

Why Is Icebox Cake So Popular?

The popularity of icebox cake in recent years is due to a few factors. For starters, it’s a cool, refreshing treat that’s ideal for summer.

A variety of flavors and ingredients can be used to make the layered cake due to its adaptability. Check out our comprehensive list of strawberry recipes if strawberries are your favorite berry.

Finally, it’s a gluten-free dessert, making it ideal for people with celiac disease or gluten allergies.

Who Invented Icebox Cake?

The icebox cake, first invented in the 20th century, eliminated the need for an oven in the preparation of a sweet treat. However, it might be expensive or challenging to get gluten-free wafers or cookies.

Is Icebox Cake Vintage?

Icebox cake has been a popular dessert for many years. This easy-to-make cake is ideal for the warmer months, or whenever you’re craving something sweet but not too heavy.

While the actual origins of icebox cake are unclear, it is safe to conclude that it is a classic treat.

If you’ve never tasted icebox cake, you’re in for a treat! Fresh strawberries are incorporated throughout the cake, which is delectably moist and creamy.

Is It Good For Birthday?

This creamy strawberry cake is ideal for a birthday. It’s simpler to adorn with candles and tastier than a cake covered in rich butter icing.

What Do You Like About This Icebox Cake?

This gluten-free cake is great because it’s quick to prepare ahead of time and is always a favorite with both kids and adults. Anybody can enjoy it!

Can I Make This Cake In Advance?

According to this recipe, it tastes the finest after chilling for almost four hours. You can eat it sooner, but it’s best when the graham crackers are soft.

Making this a night before or at least four hours beforehand is advised. The graham crackers may become too soggy and lose some of their appeal if you make this more than a day in advance.

How Long Should An Icebox Cake Be Refrigerated?

In my experience, giving graham crackers a 24-hour chill time makes them absolutely soft and sliceable. An 18-hour chill period will do the job, but I wouldn’t risk trying to cut in any sooner.  You can refrigerate this strawberry icebox cake for up to 3 days after assembling.

Can You Freeze This Summer Dessert?

The storage life of your cake can be prolonged by keeping any leftovers frozen in an airtight container.  However, this icebox cake can’t be frozen as it will lose its texture and taste in my opinion.

What Graham Crackers Are the Best to Use?

My favorite brand is Pamela’s Gluten-Free Honey Grams, although there are several kinds that also work nicely.

What Else Could I Use Instead Of Graham Crackers?

Graham crackers are used in this recipe, although you may easily use another type.

I suggest the following:

  • Gold Grahams Cereal (crushed)
  • Teddy Grahams
  • Vanilla Wafers
  • Vanilla Oreos
  • Biscoff Cookies

Can You Use Frozen Strawberries?

The icebox recipe calls for fresh strawberries, therefore I wouldn’t advise using frozen ones. It’s all about the fresh strawberry flavor in the cake. Frozen ones are typically too mushy and lack flavor.

If I Don’t Like Strawberries?

No issue. Use whichever fresh fruit you like, or omit the berry garnish and substitute graham cracker crumble.

What Other Fruit Is Good For Icebox Cake

Here are a few concepts:

Raspberries: Raspberries give the cake a tangy, juicy flavor.

Blueberries: Blueberries are the ideal accompaniment to the cake’s sweetness.

Blackberries: Blackberries give the cake a rich, savory flavor.

Peaches: Peaches give the cake a hint of sweetness and warmth.

Can I Use Any Instant Pudding Flavor?

Yes! Because of their adaptability, graham crackers & whipped cream go well with every flavor.

Can I Use Regular Ingredients? I Am Not a Vegan.

Yes! If you’d like, you can substitute ordinary milk and ordinary whipped topping, such as cool whip.

How To Use Fresh Strawberries When They Are In Season?

When strawberries are in season, they have a particular quality. You feel joyful after eating them since they are so sweet and juicy.

The ideal way to eat fresh strawberries is with this strawberry icebox cake. You can substitute other fruit if fresh strawberries are not available.

How To Choose Perfectly Sweet Strawberries?

There’s a good reason why organic strawberries are so popular: they’re nutritious and delicious. They are sweet and delectable.

How do you figure out which ones to use for your icebox cake, though?

  1. Look for brightly colored, red strawberries.

The color of the fruit reflects its ripeness, so you should select strawberries with a deep, rich red hue. White or green berries should be avoided as they won’t be as sweet.

  1. Before purchasing the berries, smell them.

Before even taking a bite, the smell of the strawberry should make your mouth water with its sugary deliciousness. If they don’t smell sweet, they might not taste as good.

  1. Check the firmness of the berries.

You should feel a little firmness when you press down on a strawberry. If it is overripe and lacks a fresh flavor, it may be excessively soft.
