Nutritional yeast: nutritional yeast is an essential component of any vegan recipe. It is a type of inactive yeast that increases the nutritional value of the dish. - 1 tablespoon coconut or olive oil
- 1 cup onion chopped
- 2 cloves crushed garlic minced
- 1 cup celery chopped
- 1 teaspoon parsley flakes
- 1 sprig thyme or 1/4 teaspoon dried thyme leaves
- 1/4 teaspoon dried oregano
- 1/2 teaspoon basil
- 1/2 teaspoon smoked paprika
- 1 bay leaf
- 1 carrot chopped
- 1 medium potato diced
- 2 cups green split peas sorted and rinsed
- 7-8 cups vegetable broth
- 1 tablespoon nutritional yeast flakes
- 1/4 teaspoon Cayenne pepper
- sea salt to taste
- sliced green onion for garnish
Instructions
- Heat oil in a large pot over medium heat. Cook onion, garlic, and celery until onion is soft.

I made this the other day even though it’s supposed to be summer in the Pacific NW. It is so….good. I’ve been eating it for breakfast, lunch and dinner. Yes soup for breakfast.
