  • Penne pasta: You can use any type of pasta you like. Some of my favorite pasta kinds include farfelle, penne, rigatoni, and similar varieties.
  • Spinach: Washed baby spinach adds color and texture to this dish. The addition of spinach to the pasta is a fantastic method to boost its nutritional value.
  • Tomato: Ideally use baby tomatoes for this recipe.
  • Onion: Use red, white, or yellow, whatever is available.
  • Garlic: Garlic appears to be a necessary ingredient.
  • Vegan cream: Use your favorite one or Cashew Cream. Wash 1/2 cup cashew with 1 1/4 cup water. 
  • Chilli flakes: Add a subtle amount of heat, substitute with cayenne pepper
  • Dried mixed herbs: This gives this pasta dish taste as well as aroma.
  • Olive oil: In order to ensure that rich and flavorful ingredients are present, I like to use good-quality olive oil. Use a more impartial oil, like grapeseed or avocado.

  1. Boil pasta in salted water.
  2. In a pan, heat some oil and add onion, and garlic.
  3. Sauté onions and garlic until golden brown.
  4. Add in spinach and tomatoes.
  5. Fry for a minute and add boiled pasta.
  6. You may add a little pasta water if required.
  7. Add in all the spices and give it a good mix.
  8. Lastly, add in cream and enjoy! This recipe is so comforting and easy to make.

  • Using fresh or dried herbs, garlic, and spring onions to flavor any recipe will help you reduce the quantity of salt you use.

  • 8 ounces penne pasta uncooked
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 3 cloves garlic chopped
  • 1 cup spinach tightly packed
  • 1 large tomato chopped or 1 cup cherry tomatoes
  • 1/2 teaspoon Italian seasonings
  • 1/2 teaspoon chili flakes or 1/4 teaspoon cayenne pepper
  • 1/2 cup vegan cashew cream see link
  • 2 tablespoons nutritional yeast flakes optional
  • 1/2 teaspoon salt


  • Bring salted water to a boil in a large pot. Add penne pasta and boil according to package directions or until pasta is aldente.
  • In the meantime, heat oil in a large saucepan over medium-high heat. Add onion and cook until soft, about 3 minutes.
  • Stir in garlic and spinach and cook until spinach has wilted about 1 minute.
  • Add tomato, Italian seasoning, and pepper.
  • Add cashew cream, nutritional yeast, and salt.
  • Drain pasta using a colander, (reserving a little of the pasta water to thin the sauce) and add pasta to the saucepan, stir to coat. Check seasonings and serve.

    Hi! I liked this recipe. I had to modify it as I don’t use nutritional yeast and I find that when you leave it out of a recipe the dish lacks flavor. So instead, I used 2 teaspoons of Italian seasoning (instead of the 1/2 teaspoon), 1 teaspoon of Trader Joe’s Umami seasoning and approximately 1 teaspoon of coconut aminos. Also I ended up making the cashew cream which makes more than a half cup of cream and I decided to use the whole thing in the recipe as the 1/2 cup the recipe calls for wasn’t saucy enough after it thickened up. I will make this again! Thank you!

    1. Marianne, I understand. One of my New Years’ goals is to not add any more recipes with yeast flakes. It has been a long time coming unless I update an old recipe.
