Ingredients

  • 1 tablespoon avocado oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 medium celery root peeled and chopped
  • 2 medium potato scrubbed and chopped
  • 1 1/2 cups cooked white beans (navy, white kidney beans, Great Northern)
  • 3 cups vegetable broth
  • 2 sprigs thyme
  • 1 teaspoon salt or to taste
