Creamy Broccoli Salad

Creamy Broccoli Salad

This delicious broccoli salad is not only delicious but also healthy and filling. I served it with a creamy basil dressing that has avocado and lemon. A great salad for detoxing, especially for someone on phase 1 of the candida diet. I enjoyed the combination of broccoli with creamy avocado and the crunchy sunflower seeds. I really enjoyed this salad and can’t wait to make it again.

Broccoli contains phytochemicals gluconasturtiin, glucoraphanin and glucobrassicin which assist the body in neutralizing and removing toxins. Broccoli is also beneficial in preventing cancer by boosting the immune system, reducing inflammation in the body, lowering cholesterol, preventing heart disease and improve digestion.

  • 4 cups broccoli florets
  • 2 teaspoons olive oil
  • ½ avocado, chopped
  • ¼ cup red onion, chopped
  • 2 tablespoons sunflower seeds
  • Creamy Avocado Basil Dressing
    • ½ avocado, chopped
    • 2 tablespoons lemon juice
    • 2 tablespoons olive oil
    • ½ cup water
    • ¼ cup packed basil leaves
    • 1 clove garlic
    • ½ teaspoon sea salt
    • ¼ teaspoon cayenne pepper

Preheat oven 400°F. Line baking sheet with parchment paper and set aside. Place broccoli florets in a large bowl, toss with oil. Place broccoli florets in a single layer on baking sheet and bake for 20 minutes or until broccoli is tender. While broccoli is roasting prepare the dressing. In a high speed blender add all the ingredients and process until smooth. When broccoli is finished removed from oven and transfer to a large bowl. Add avocado, onion and sunflower seeds. Stir in dressing to coat. Serve immediately.

Is this dish supposed to be served warm?

Yes you can serve it warm or cold. I don’t like to eat raw broccoli, it is too hard on the digestive system so I like my broccoli cooked at first to break down the cell walls.

Absolutely delicious. Used a small amount of a birdseye chilli instead of the cayenne. And have now ordered the cookbook, so can’t wait.
