  • Red Beets: When we think about beets, this is the first thing that comes to mind. These red beets are frequently used to make salads, roasted beets, fries, and many more. These beets are amazing for storing as they gain tenderness and sweetness along the way. 
  • Golden Beets: Golden or yellow Beets have a mild and sweet flavor compared to other beets. It is a great vegetable to make a colorful meal for your family. 
  • Chioggia Beets: The beautifully natural striped Chioggia beets are quite popular with salads. They have a subtle yellow-and-orange texture, while some have a red-and-cream candy cane mixture. After they are cooked, the stripe fades or disappears usually.
  • Baby Beets: These beets are tender and mostly luscious green. These are normal beets that are pulled straight out from the land to make room for other beets to grow. 
  • Lutz Green Leaf Beets: These beets are the largest among other varieties of beets. These are good for making fries and roasted dishes.  

How to Store Beets for Later?

Whatever types of beet you purchase, you can store them later to make fries and other recipes. Follow these steps to store the beets, 

 

  • Wash the beets thoroughly. 
  • If you buy beets with their leaves and stems attached, cut them apart before wrapping them loosely with a plastic bag and put them in the refrigerator. 
  • Put the beets in a sealed storage container or food storage silicone bags. 
  • You can store these beets fresh for up to 2 weeks in the refrigerator. 
  • You can store the beet green separately in a sealed container for later; it will stay fresh for 3 to 5 days.

How to Cut Beet For Fries?

  • With a sharp knife, cut beets into half crosswise, then each half into 1/2 inch slices. Make matchsticks about ½ inch size with each slice.

For The Beet Fries

  • Beets – choose fresh beets that aren’t bruised and withered, preferably with tops on so you can cook the Beet Greens.
  • Olive oil – I prefer to use extra-virgin olive oil, you can also use avocado oil.
  • Garlic powder – gives a boost of flavor.
  • Salt – I used sea salt.

For The Chipotle Aioli

  • Cashews – use raw cashews, usually sold online or in the health food store.
  • Water – filtered water is best.
  • Lemon juice – best to use fresh lemon juice.
  • Nutritional yeast flakes – added for their cheesy flavor, can eliminate. usually sold online or in the health food store.
  • Maple syrup – gives a mildly sweet flavor to contrast the smoky, spicy flavors of the dip
  • Garlic – I used 2 cloves but you can use less.
  • Chipotle pepper – you can use chipotle in adobe sauce or dried chipotle
  • Cayenne pepper – a little goes a long way so start with a pinch.
  • Cumin – add to the smoky flavor.
  • Salt- I used sea salt

How To Make Beet Fries With Chipotle Aioli?

  • Preheat oven 400 F. Line the baking sheet with parchment paper and lightly grease.
  • Trim the greens and roots of the beet and wash it thoroughly under cold water. Peel and cut the tops of beets. If they came with leaves, and save to make beet greens recipe.
  • With a sharp knife, cut beets into half crosswise, then into slices. Make matchsticks about ½ inch size. 
  • Place beets strips into a large bowl, toss with garlic powder and salt.
  • Put the marinated beets in a single layer on a prepared baking sheet. Bake for 30 minutes, turning halfway.
  • When the fries are done, allow them to cool for a while as they will crisp when cool. Enjoy! 
  • To prepare Chipotle Aioli dip, place all the ingredients in a high-speed blender and process until creamy. Keep in refrigerator for up to 5 days.

  • If you want to make a combination of red and golden beets, then divide them into separate trays, or else the red beets will stain golden beets. 
  • If you want, you can keep the skin of the beets as sometimes peeling can be tiring. It’s all your personal preference. However, it is important to scrub them well under cold water and take out the roots from the ends.
