I decided to create this banana bread with berries, the taste was so amazing! It’s an upgraded version of my awesome Vegan Gluten-Free Banana Bread recipe. The taste was amazing with berry flavor in every bite.
My husband was so happy when he came home that evening because I made his favorite banana bread.

I added the new protein powder and fresh berries I had recently bought from the farmers market. He was now curious to taste it. He too was blown away and very impressed with how the recipe turned out and in no time the bread was all gone! This is the only banana bread with mixed berries you will need.
This Berry Banana Bread Is

Before making this bread, I wanted to use the best ingredients I could find. I decided to go to one of our local farmers market here in Gainesville, Florida. This time of year, the Gainesville farmers market was in full swing with over 60 vendors (farmers and artisan) who come to the market on a weekly basis all year round.
Moving here from Ohio, I was so happy to be able to attend an outdoor market all year round. I was overjoyed with the market’s family-oriented atmosphere. What To Do With Overripe Bananas?
- Freeze them for making smoothies.
- Freeze them for making ice cream.
- Use them mashed as an egg replacer in your baked desserts.
- Make frozen banana pops
- Add to pancakes.
- Add to oatmeal.
How Do You Make Vegan Banana Bread?
I decided to make the loaf bread without added oil because I used coconut oil in the glaze. The mashed bananas and raspberry glaze were enough to produce a super moist loaf of bread.
Preheat oven 375 degrees. Prepare loaf pan and set aside.
In a small bowl, mix flax seeds and water, set aside for 5 minutes. In a large bowl, combine rice flour, almond meal, coconut sugar, baking powder, protein powder, and salt.
Combine almond milk, bananas, vanilla, flax seed/water mixture, and salt. Stir together wet and dry ingredients until fully combined. Fold berries into batter gently. Spoon batter into prepared loaf pan.
Bake for 1 hour and 15 minutes or until the toothpick inserted into the middle comes out clean. Remove from oven and place on a cooling rack until completely cooled.
Make the glaze and brush over your banana bread and serve.

Ingredients
- 2 tablespoons ground flax seeds, mixed with 1/4 cup water
- 1 1/2 cups brown rice flour
- 1 cup almond meal
- 1/2 cup coconut palm sugar
- 2 teaspoons baking powder
- 1 scoop organic protein powder, (optional)
- 2 bananas mashed
- 3/4 cup almond milk
- 2 teaspoons vanilla
- 1 cup berries, (blueberry, strawberry, blackberry, raspberry), chopped larger berries
- 1/2 teaspoon sea salt
Raspberry glaze
- 1/4 cup coconut oil
- 1/4 cup almond, (or cashew butter)
- 2 tablespoons maple syrup
- 1/4 cup raspberries
- 1 teaspoon lemon juice
- 1 tablespoon vegan protein powder
Instructions
- Preheat oven 375 degrees. Prepare loaf pan and set aside.
- In a small bowl, mix flax seeds and water, set aside for 5 minutes. In a large bowl, combine rice flour, almond meal, coconut sugar, baking powder, protein powder, and salt.
- Combine almond milk, bananas, vanilla, flax seed/water mixture, and salt. Stir together wet and dry ingredients until fully combined. Fold berries into batter gently. Spoon batter into prepared loaf pan.
- Bake for 1 hour and 15 minutes or until a toothpick inserted into the middle comes out clean. Remove from oven and place on a cooling rack until completely cooled.
- Meanwhile prepare raspberry glaze.
- Place all ingredients in a food processor and process until smooth. Pour glaze over bread. Cut into slices and serve!
Notes
*I used almond meal in this recipe so I don’t know how almond flour would turn out. I used my high-speed blender and add whole almonds and process to make almond meal.

I still haven’t had luck baking with protein powder – this recipe could be the one!
