Purple Sweet Potato Health Benefits

Purple potatoes are one of the eye-catchy gems of the potato world. Sweet potatoes, also often named yams, are fleshy root vegetables with a sweet and earthy flavor.

Purple sweet potatoes have a greyish brown or greyish purple skin, and purple flesh inside that becomes soft and smooth when cooked. It has a sweet and nutty flavor used to make varieties of dishes from sweet to savory. 

Purple sweet potatoes are a good source of beta carotene enriched with essential nutrients and antioxidants that can help prevent inflammation and boost our immunity. Purple sweet potatoes have a three times greater amount of anthocyanin than blueberry. Here are the health benefits of purple sweet potatoes:

  • Purple yams are a rich source of vitamin C and powerful antioxidants. It can protect our bodies against cancer and cell damage.  
  • Eating purple sweet potatoes can help our body to control blood sugar levels. It can also prevent sudden blood sugar spikes and steadily release energy. 
  • Researches have shown that it has an impressive level of blood pressure-reducing effect and lowers the risk of chronic diseases. 
  • Antioxidants like vitamin A and C in purple potatoes can help our body reduce the risk and symptoms of asthma. 
  • Eating purple sweet potatoes can improve eye and heart health. 

What is Coconut Sugar?

Coconut sugar is also known as coconut palm sugar. It is made from natural coconut palm sap that circulates the fluids of coconut. It is pretty similar to palm sugar but created from different palm trees.

Standard sugar does not have any nutrients, but coconut sugar contains a small number of nutrients like fiber, minerals, and antioxidants. There are many harmful effects added to normal sugars; that’s why people are switching to natural alternatives.  

Coconut sugar is brown and granulated. The color will be similar to brown sugar, but the particle size will be smaller or more variable. 

What is Coconut Whipped Cream?

Coconut whipped cream is a dairy-free substitute for classic whipped cream. It is best for vegan-friendly and dairy-free peoples that are looking for a good quality substitute.

Homemade coconut whipped cream is made from a good quality brand of coconut milk or coconut cream. Here are some essential tips you can follow to make perfect whipped coconut cream,

  • Keep coconut milk or cream overnight in the refrigerator, not in a freezer, to get a better result.
  • Chilling overnight is the key point to get the coconut cream to harden, and it will become a soft texture when you whip it. 
  • Before starting the whipping process, chill the large mixing bowl in the freezer for about 10 minutes. 
  • If the whipped cream becomes too stiff in whipping time, add some reserved coconut milk from the can to blend it smoother to create more air.
  • If you see clumps, keep whipping and scraping up and downsides and add some milk to make it a softer texture and create more air.
  • Keep the cream sugar-free and add stevia for taste!

Difference Between Coconut Milk and Coconut Cream?

Coconut cream is much thicker and richer than coconut milk is. It’s made in a very similar way, however!

The difference is that in the recipe for coconut cream, much more coconut is used, relative to water. Typically, four parts of shredded coconut are simmered in one part of water. This results in a much thicker, richer, and more concentrated liquid, which can be used to add an intense coconut flavor to a dish.

Interestingly, coconut cream is also used in many Southeast Asian curries and soups, as it can lend a similar, but not identical, flavor to coconut milk. As well as the flavor it imparts, it has an inherent thickness which can be very useful. Vegan Purple Sweet Potato Pudding Recipe

  • Purple sweet potato
  • Coconut milk
  • Coconut sugar
  • Ginger, freshly grated
  • Vanilla
  • Gluten-Free all-purpose flour or brown rice flour
  • Cinnamon
  • Nutmeg 
  • Sea salt

Custard Topping

  • Coconut milk
  • Coconut sugar
  • Vanilla
  • Cinnamon, optional

How To Make Vegan Sweet Potato Pudding

  • At first, preheat the oven before baking and set the temperature at 375℉. Grease a 9-inch round baking pan.
  • Wash and scrub the purple sweet potatoes to get them cleaned properly. Peel the sweet purple potatoes and chop them into cubes. 
  • Using a high-speed blender, add coconut milk, coconut palm sugar, spices, salt, and purple sweet potatoes.
  • Pulse the blender until sweet potatoes are finely pureed. Transfer the mixture to a large bowl. 
  • Stir in the flour to make a perfectly smooth batter. 
  • Pour the batter into the baking pan and bake it for at least 75 minutes. 
  • Mix all the custard topping ingredients in a small bowl and pour them equally on the top of the pudding.
  • Return the pudding to the oven and bake it for another 15 minutes, until the top gets a golden brown texture. 
  • You can serve this delicious pudding alone, or add some coconut whipped cream on top.
