What Type of Apple Should I Use?

 

For apples, you can find many variations of apples in the market. But I would suggest choosing the apple flavor you love the most as it will determine the cake’s taste. 

 

If you love sweeter ones, go for Honeycrisp and pinata apples, but if you want sour apples like granny smith, you can go for it. 

 

Wondering if you should peel the apples? You can do it, but there are lots of nutritional benefits inside those peels, so you decide what you want to do.

 

For cutting apples, you can either shred them or simply cut them into small cubes. Shredding apples will give a simple flavor of apple in cake with no apple texture in it. 

 

I suggest cutting the apples into thin but noticeable pieces because when you cook them, they will become soft without a crunchy texture, but it will give a delicious juicy apple flavor.

  • Oat flour
  • Almond flour
  • Ground flaxseeds
  • Baking powder
  • Cinnamon
  • Salt
  • Maple syrup
  • Almond milk
  • Vanilla
  • Walnuts
  • Raisins
  • Apple

How To Make Vegan Apple Breakfast Cake?

  • Preheat oven 375℉. Put an 8×8 baking pan with parchment paper and lightly grease, then set aside.
  • Mix all the dry ingredients such as oat flour, almond flour, ground flaxseeds, baking powder, cinnamon, and salt in a large bowl and set it aside. 
  • In a medium bowl, add maple syrup, almond milk, vanilla, stirring until thoroughly combined.
  • Fold in walnuts, raisins, and apples together with wet ingredients.
  • Now make a hole inside the dry ingredients and add the apple mixture. Stir with a spatula or spoon well until you have a smooth and thick apple batter. 
  • Pour the batter in the prepared pan and bake for 40-45 minutes, or until a fork or toothpick inserted in the cake’s middle comes out clean. 
  • After the cake is prepared, let it cool for 20 minutes before taking it out from the pan.

Storage and Serving 

  • Serve the cake with vegan whipped cream or vegan cashew cream, or vegan ice cream toppings. You can add some crushed nuts on top of the ice cream. 
  • You can serve the apple cake with some caramelized apple slices. To make this, toss the apple slices in the pan at medium temperature.
  •  Add a lemon juice, a pinch of cinnamon, and a few tbsp coconut sugars and stir well to mix properly for 2 minutes. If they look dry, add a tbsp. of water and cook for 5 minutes, depending on how soft and caramelized texture you prefer. 
  • You can keep the leftover cake in an air-tight container and store them in the fridge for up to 5 days. 

Tips and Tricks 

 

  • Before you take the cake out from the pan, use the flipping technique, so you don’t have to break the cake. Place a large plate upside down over the pan and strongly hold the plate upside down over the pan in one smooth motion. If you use a square or rectangular pan, you use a wire baking rack for the flicking. 
  • You can make muffins with this recipe. For this, add the batter to the muffin cups and bake it for 25 minutes.
