Preparing Garlic Confit is a great way of using up an abundance of garlic; mind you, I am a garlic lover, and I’m always looking for ways to include garlic recipes in my diet. Garlic is one of those ingredients that you either love or hate; I love garlic and cook with it all the time, like Garlic Butter, Garlic Bread, and Garlic Rosemary Mashed Potatoes.

Confited garlic is a great way to use up your abundance and remove the harsh, burning taste of raw garlic; it really softens the flavor and brings out an amazing sweetness. Store your garlic confit in a glass jar with a tight-fitting lid for about two weeks in the refrigerator.

What To Do With A Lot Of Garlic?

  •  Freeze peeled garlic cloves in freezer bags.
  • Roast garlic and freeze for later use.
  • Blend garlic cloves, pour into ice cube trays and freeze until solid. Remove from ice cube trays and store in freezer containers. 
  • Make pickled garlic.
  • Thinly slice garlic then dehydrate them in a dehydrator.
  • Make Garlic Jam.
  • Make Garlic Butter And Freeze.
  • Make Garlic Chips, thinly slice the garlic cloves and fry in oil until crisp being careful not to burn.

What Does Confit Mean?

Confit is an ancient method of slowly cooking meat especially duck, it was salted and slowly cooked in its own fat. It was a method used to preserve meat long ago, especially in France. Today garlic and tomato are prepared using this method.

Garlic confit uses the same ancient technique resulting in a rich, creamy fragrant and flavorful cloves of garlic that melts in the mouth.

  • Garlic 
  • Olive Oil
  • Thyme
  • Rosemary
  • Salt

How To Prepare Garlic Confit?

For an easy garlic confit, I used the oven method because it was incredibly easy to do and needed very little attention. You just add the ingredients to the baking dish and allow it to bake.

  1. Preheat oven 350 degrees F. Using an oven-safe dish, add olive oil and salt, stir to dissolve the salt. 
  2. Add garlic cloves, thyme, rosemary, making sure the garlic is covered by the oil.
  3. Transfer the baking dish into the middle rack of the oven and bake until garlic cloves are tender about 45 minutes.
  4. Allow garlic confit to completely cool, store it into a container with a tightly covered lid for about 2 weeks in the refrigerator. Make sure that the oil is covering the garlic confit.
  5. To serve, use a clean dry spoon to serve.

Garlic Confit is easy to prepare, garlic cloves are topped with olive oil, oregano, and thyme, slowly baked. The final result is resulting in a soft slightly sweet spreadable condiment that can be added to pasta, sandwiches, steamed vegetables, baked potatoes.
