I decided to make this amazingly delicious Chocho curry recipe with all the flavors of Jamaican herbs and spice

- Manual can opener, Paper Plates, Cups, Bowls, Disposable Knives, and Forks.
- You need to have at least 7 day supply of water and non-perishable foods. What Is Chayote?
Chayote also is known as Chocho, mirliton squash, vegetable pear, its scientific name is Sechium edule and belongs to the gourd family, Cucurbitaceae. Other plants in the Cucurbitaceae family are pumpkin, zucchini, cucumber, melon. Chocho is an edible squash that is grown in the Caribbean, Asia, Florida, Central, And South America. The entire plant including roots, leaves, shoots, fruits is edible. It is enjoyed for both it is culinary and medicinal uses.
Chayote can be eaten raw, cooked, fried, boiled, baked and mashed.
Chayote has many health benefits, is low in calories one chayote has 39 calories only, high in vitamin C and folate. Chayote has many antioxidants, including, quercetin, myricetin, kaempferol, and morin. (1)
Chocho Curry Ingredients
- Chayote/Chocho – Chayote are sold in most major supermarkets, including Walmart, Whole Foods Market, it is also sold in Indian, Chinese and Mexican grocery stores.
- Coconut Oil – use your favorite cooking oil.
- Onion – use fresh onion or 2 green onions chopped.
- Garlic
- Ginger – use fresh ginger for a better tasting curry. Ginger can be washed, peeled and stored in the freezer in a freezer bag until ready to use just remove from the freezer and grate.
- Curry Powder – Using the right curry powder can make a huge difference in the outcome of your dish. Use my absolutely favorite storebought curry powder or make my Easy Homemade Curry Powder Recipe.
- Allspice
- Thyme
- Vegan Bouillon – There are quite a few vegan bouillons on the market, one of my favorites is Not-Chick’n Edward & Son’s, Bouillon.
- Thyme
- Water
- Scotch Bonnet Pepper – you can substitute habanero pepper or cayenne pepper.
- Salt

How To Jamaican Chocho (Chayote) Curry?
- Cut Chocho/chayote into half lengthwise. Remove the inner core and peel each half, chop into bite-sized pieces, set aside.
- In a large saucepan, heat oil and add onion, garlic, ginger, and cook until onion is soft, stirring constantly.
- Add curry powder, allspice, cook curry powder stirring constantly until fragrant, about 1 minute.
- Stir in the Chocho, vegan bouillon, thyme, water, whole Scotch bonnet pepper.
- Bring to a boil, cover saucepan and reduce to simmer for 15-20 minutes. Check the seasoning, add salt to taste.
- Delicious served with Brown Jasmine Rice.
