Who doesn’t enjoy a good strawberry pie? This one is such a crowd pleaser. This simple and easy to make No Bake strawberry cream pie is perfect for special occasions, like summer BBQ, Memorial weekend, Valentines or potlucks.
My No-Bake Strawberry Ice Box Cake was such a huge hit, I decided to make another no-bake strawberry creation, especially how at this time of year fresh strawberries are plentiful in Florida.
Strawberry Pie Ingredients
- Gluten-Free Graham Cracker Crust – or use storebought.
- Strawberry Cream Pudding
- Coconut Whipped Cream
- Fresh Strawberries
How To Make Strawberry Cream Pie
Prepare Graham Cracker Pie Crust and set aside. In a high-speed blender add. coconut milk, strawberries, sugar, cornstarch, vanilla, Process until smooth and creamy.
Heat strawberry mixture in a large saucepan over medium-high heat while stirring. Bring to a light boil while stirring constantly with a whisk for 2 minutes to prevent the sauce from being lumpy.
Reduce heat to simmer and further thicken about 1 minute. Remove from the heat. Pour strawberry pudding into the pie crust and transfer to the refrigerator to set for at least 2 hours.
To serve top the pie with Coconut Whipped Cream, garnish with fresh slices of strawberries, and graham cracker crumbs.

- 1 cup coconut whipped cream, *link to recipe
- graham cracker crumbs, for garnish
- Strawberry slices, for garnish

Very delicious! Mine did not set up well but I think it was my fault. I added extra strawberries bc I wasn’t sure how to measure 1 cup. Lots of space in the cup so I just added a bunch. Added some sweetner in place of sugar. Probably threw off the ratio for the corn starch but the taste was excellent. I also used the almond flour crust also excellent. Husband is a new diabetic so I try to reduce carbs where I can
Btw coconut flavor was barely present.
With 28 oz of coconut milk does it taste more like strawberry or coconut?
It tasted like strawberries to me because I used a whole cup of strawberries, but I love both flavors so I might have to pay more attention next time.
I made this for Valentines and my partner loved it. It was so good I just had to leave a comment! I used store bought crust but next time I’ll be trying yours.
