It doesn’t matter what season it is, but soup is always there in our house.  So today, I decided to share a deliciously healthy Vegan Zuppa Toscana recipe with you. I’m sure you will appreciate it as much as I do throughout the year.

This one-pot creamy vegetarian Tuscan soup is filled with healthy nutrients and flavors. It’s the ideal comfort food for a weekday dinner, a perfect lunch to prepare ahead of time, or a dinner party.

Consider it a posh vegetarian copycat version of the popular Olive Garden soup, but with a healthier twist that includes whole foods plant-based goodness. Everything tastes great when prepared at home, and much more so when vegan!

What Is Zuppa Toscana?

The Italian soup “Zuppa Toscana” translates to “Tuscan soup.” Many veggies, potatoes, white beans, and olive oil are included in a classic Zuppa Toscana.

The Olive Garden Zuppa Toscana, with heavy cream, sausages, and potato, is an Americanized version of this soup.

How to Prepare Vegan Zuppa Toscana Soup?

This Vegan Zuppa Toscana Soup is super easy to prepare. Take a look at the instructions below; all you have to do is combine a few ingredients, and you’ll have a delicious and nutritious soup.

Ingredients

  • 1 batch Cashew Cream
  • 1/2 cup cashews
  • 1 water
  • 1 tablespoon tapioca starch
  • 2 tablespoons olive oil divided
  • 4 sausages (Beyond Sausage or Homemade) sliced into ½ inch pieces
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 sprigs thyme
  • 6 potato, diced
  • 5 cups vegetable broth (I used 2 vegan bouillon cubes plus 5 cups water)
  • 1 tablespoon nutritional yeast flakes
  • ½ teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 4 cups kale, remove stems, and  chop

Directions

  1. Prepare cashew cream, process the cashews, and water in a high-speed blender until creamy and set aside.
  2. Heat 1 tablespoon olive oil in a large pot over medium-high, add sausage, and cook until brown on each side, about 5 minutes. Remove and set aside on a plate.
  3. Heat the remaining 1 tablespoon olive oil, add onion and cook until soft, stirring constantly.
  4. Add garlic, thyme, potato, and stir to coat for about 30 seconds.
  5. Add vegetable broth, nutritional yeast flakes, paprika, onion powder, garlic powder, and bring to a boil. Reduce heat to simmer for 10 minutes.
  6. Stir in the kale, cashew cream, and salt to taste; cook for 5-7 minutes or until kale is tender.
  7. Add the cooked sausage to the soup and adjust the seasonings (if needed). Serve hot garnished with fresh chopped parsley.zuppa toscana soup with cashew cream pouring in the pot

Tips for Storage

Let the soup cool completely before storing. Then, you can store it in airtight containers for 4-5 days in the fridge. Then, use a microwave or a stovetop to reheat it up when you want to have it!

Soup can be frozen in freezer bags or food-safe plastic containers for long-term storage. Allow the soup to thaw in the refrigerator overnight before serving. Then, reheat it in the microwave or on the stovetop.

It’s a wonderful idea to freeze the broth and then reheat it with fresh vegetables. 

Reheated leftovers should not be stored. This is widely seen as a dangerous food practice. 

Substitutions and Variations

Hold for a moment and look at the following possible variation of this soup:

  • Replace the vegan sausage with alternative plant-based protein sources, such as beans or cubed tofu.
  • Add any seasonal vegetable you like, from carrots to tomatoes to string beans.
  • Kale can also be easily substituted with other leafy greens such as Swiss chard, spinach, or broccoli.
  • To make this soup oil-free, steam the vegetables in a bit of boiling water or vegetable broth instead of sautéing them in oil.
  • You can also use your favorite seasoning.
  • Garnishing is completely optional. You can use coconut cream swirls, roasted seeds, Thai basil, etc. Leave them out if you don’t have any of these; it’s delicious on its own.

Chef’s Notes

Cashew Cream Recipe

To make the cashew cream soak the ½ cup cashews for 10 minutes in hot water. Drain the wet cashews and combine them with 1 cup of water and the tapioca in a high-speed blender. Blend until the mixture is smooth and creamy.

The tapioca is completely optional. Use it only if you want a thicker soup. However, without it, the soup is quite rich and creamy.
