- 1 tablespoon coconut or olive oil
- 1 cup onion chopped
- 2 cloves crushed garlic minced
- 1 cup celery chopped
- 1 teaspoon parsley flakes
- 1 sprig thyme or 1/4 teaspoon dried thyme leaves
- 1/4 teaspoon dried oregano
- 1/2 teaspoon basil
- 1/2 teaspoon smoked paprika
- 1 bay leaf
- 1 carrot chopped
- 1 medium potato diced
- 2 cups green split peas sorted and rinsed
- 7-8 cups vegetable broth
- 1 tablespoon nutritional yeast flakes
- 1/4 teaspoon Cayenne pepper
- sea salt to taste
- sliced green onion for garnish
Instructions
- Heat oil in a large pot over medium heat. Cook onion, garlic, and celery until onion is soft.
- Stir in parsley, thyme, oregano, basil, smoked paprika, and bay leaf, and cook until fragrant.
- Add carrot, potatoes, split peas, vegetable broth, nutritional yeast flakes. Cover the pot, and bring to a boil.
- Reduce to a simmer for 45 minutes. Discard bay leaf and add salt to taste. Serve in a bowl with green onions to garnish
