We simmer the potatoes until they are nice and soft, then mash them directly in the pot. This gives the soup a thick and creamy texture without having to add any cream or milk.

The onions and garlic add flavor and depth to the soup, while the bouillon cube adds a touch of saltiness. You can adjust the number of bouillon cubes to taste. If you’re watching your sodium intake, you can leave it out entirely or use a low-sodium bouillon cube.

  • Potatoes – I used organic red-skinned potatoes. I also scrubbed them and left the skin on for the extra boost of vitamins, minerals, and fiber.

  • Garlic – added 3 cloves for extra flavor.
  • Vegan bouillon cube – I used Edward and Son’s Not Chickn Cubes. 
  • Water – I used 2 3/4 cups water plus 1/4 cup coconut milk, for a creamy and flavorful broth.

Directions

  1. Bring water and coconut milk to a boil in a large pot over medium-high heat.
  2. Add potato, onion, garlic, and vegan bouillon cubes and cook for 15-20 minutes or until tender.
  3. Process soup using a handheld blender or add soup to the blender and process until smooth and creamy.
  4. Divide soup into bowls, garnish with green onion, and serve.

  2. If you want to make the soup more filling and nutritious, you can add vegetables such as carrots, celery, and peas, you can also add tofu or tempeh for extra protein.
  3. If you are a fan of spicy food you can add a bit of chili pepper to the soup. You can also use green chilies, chili flakes, and /or Tabasco sauce to taste.
  4. You can garnish this soup with vegan sour cream, cheese, and/or green onions. You can also add coriander leaves, cumin powder, and/or black pepper to taste.
