I don’t know about you, but I’m a bit of a nerd. If it’s not a scientific discovery or natural phenomenon that fascinates me, I’ll probably be asking myself how it’s even possible to make. That is why I’m always on the lookout for natural alternatives that can replace some of my favorite treats (and keep them vegan too).

This same thing is true for blueberry bars.

I have been looking for a long to make a vegan version of my favorite blueberry bars that my friend’s grandmother used to make for us. Finally, I succeeded in making this vegan blueberry bars recipe and decided to share it with you. I’ve developed a tasty vegan blueberry bar recipe that contains only a few ingredients and takes less than an hour to make (less time than most of my other recipes)!

These simple vegan blueberry bars are perfect for breakfast or snacks on the go!

They are prepared with healthy ingredients and are dairy, gluten, and refined sugar-free! They have a crumbly oat base, an ooey, gooey blueberry filling, with notes of lemon! Once making these, you will never buy store-bought blueberry bars again!

These bars are not only delicious and healthy, but they are great for any occasion. They are easy to prepare ahead of time so you can just grab a few and put them in your lunchbox or enjoy them after work with a glass of wine for instant energy.

Are Vegan Blueberry Bars Worth Making?

Yes, without a doubt.

  • First and foremost, these are quite easy to make.
  • Second, there are only a few readily available ingredients used in this recipe.
  • Third, no refined sugar is used in the recipe.
  • Fourth, the bars have a very low-calorie count per serving and are naturally vegan and gluten-free.
  • Fifth, these bars are quite adaptable. To suit your tastes, you can also add seasonings and flavors. You can also replace blueberry with other fruits as well. I enjoy adaptability.

Are Vegan Blueberry Bars Healthier?

Compared to store-bought bars, these blueberry bars are far healthier. They contain a ton of whole grains, fiber, and antioxidants, plus they don’t contain any preservatives. Granola bars are great to make at home since you can control the ingredients. Most of the components in these bars are whole foods that have undergone minimal processing.

These delicious blueberry crumble bars are stuffed with a blueberry filling that is juicy, tangy, fresh, full, and healthy. They are fully plant-based and produced with wholesome ingredients. The blueberry bars don’t include refined sugar because they are only gently sweetened with maple syrup. Additionally, oats and almond flour are great sources of whole grains and plant-based protein.

Ingredients For Vegan Blueberry Bars

Blueberry Filling

  • Blueberries: Fresh blueberries in the season would be ideal for this dish, but frozen blueberries will suffice! We always have frozen blueberries on hand, so we used those in this wholesome breakfast recipe.
  • Apple sauce: Brings out the flavor and makes a healthy filling.
  • Maple syrup: When available, we want to use pure maple syrup as a natural sugar in our baked items. Yay for healthy, naturally-sweetened blueberry jam!
  • Lemon juice: The lemon flavor wonderfully complements the blueberries.

Oat Base

  • Certified gluten-free rolled oats: To make this recipe, use rolled oats. These blueberry bars, made with old-fashioned oats, have a lovely texture and would be great for breakfast.
  • Buckwheat flour: Buckwheat is an adaptable, nutrient-rich plant whose seeds resemble grains. By grinding these seeds, you can make buckwheat flour. It’s a great source of fiber, and it doesn’t include gluten because it’s not wheat.
  • Almond flour: Paleo diet adherents adore almond flour because it adds texture and flavor. Cakes, cookies, muffins, pancakes, and bread can all be made using it.
  • Ground flax seeds: flaxseed is a good egg replacement in vegan dishes.
  • Baking powder: Baking powder is a leavening agent.
  • Salt: Wait, more salt?! Yes! A pinch of salt enhances the flavor of these vegan bars! Our kitchen’s ideal flavor pairing is sweet and salty.
  • Maple syrup: This is done to gently sweeten the dish. You can also omit it entirely, or substitute coconut sugar or brown sugar (to taste).
  • Coconut oil: Coconut oil nicely binds all the ingredients. It also adds moisture and a buttery flavor to the bars. You can also use any type of oil (olive or vegetable) or vegan butter.
  • Vanilla: Although store-bought vanilla extract is also an excellent option, I always make my own because it is less expensive and much simpler to make.

How To Make Vegan Blueberry Bars?

  • To make the jam, bring blueberries, applesauce, maple syrup, and lemon juice in a medium saucepan over medium heat. Bring to a boil and reduce heat to simmer until sauce is thick around 20 minutes. Remove from heat and allow to cool.
  • Preheat the oven to 375°F. Line an 8×8 baking dish with parchment paper and spray with cooking oil. Set aside/
  • In a large bowl, add oats, buckwheat flour, almond meal, flaxseeds, baking powder, and salt. Mix maple syrup, coconut oil, and vanilla in a smaller bowl.
  • Stir in the liquid mixture, and into the dry ingredients until thoroughly combined.
  • Set aside 1/3 of the base and press the remaining 2/3 in the base of the prepared pan. Spoon blueberry jam on top of the base and spread evenly using a spoon.
  • Sprinkle the remaining oat mixture on top. Bake for 30 minutes or until the top is golden brown. Remove from oven and allow to cool before cutting into bars.

Storage Suggestions

  • Any leftovers can be stored in an airtight container for three to five days at room temperature. They can also be kept for up to two weeks in the refrigerator.
  • They will last roughly six months in the freezer.
  • If you want to consume it, reheat it for 10 to 15 seconds.

Tips

  • If blueberries are out of season where you live, use frozen blueberries. Additionally, it may be considerably less expensive!
  • Add lemon zest to the filling to give it an extra dose of zesty, fresh taste.
  • Replace one mashed banana with apple sauce.
  • You can replace the maple syrup with any other sweetener of your choice! Agave also works nicely!
  • Before enjoying, let the bars cool. They could crumble if you remove or cut them too soon.
  • Enjoy them cold! The flavor of these blueberry bars is the finest after they’ve chilled in the refrigerator.

I haven’t tried it, but I think it would be best to let the blueberries thaw in a colander so the extra water can drain out. Then follow the directions to make the jam. Frozen berries, being softer than fresh, may not require mashing.

Absolutely! Use any berry or fruit you like, and don’t be hesitant to get creative.

Can I Use A Different Kind Of Fruit?

Sure! Use any berry you like, if you like. However, because I haven’t tested the jam on anything other than berries, I would stay away from it.
