Okra Fries
My delicious Okra Fries are a great way to add veggies to your diet as a snack, appetizer, or side dish. It is also a great way to get picky eaters to try something new!
It seems like recently I’ve challenged myself with how many different ways I can prepare okra! I have just been enjoying taking this wonderful veggie and making it in every way possible, and these Okra Fries are no exception.
Here in the South, the fried okra recipe is very popular. Okra fries done in the oven is healthier than fried okra, so I’m excited to prepare it this way because I get the same results without all the unwanted fried okra calories. After all, I do love okra whatever way it is prepared, my waistline just doesn’t love all the extra calories!

Potatoes are amazing, but I also love to make other types of fries out of any and everything. Just like my Jicama Fries and Zucchini Fries, these turnip fries are low calorie and delicious. You get to enjoy your treat without the guilt. The beauty is turnips are plenty here in Florida this time of the year.
I purchased turnip greens including the roots from the local market, used the leafy greens to make my Southern-Style Mixed Greens recipe, then use the roots to make this amazing turnip fries recipe.
Baked Jicama Fries
Have you ever had jicama or Mexican yam? It is actually from the bean family. This delicious Baked Jicama Fries is a great way to enjoy this healthy low-calorie vegetable!
Raw jicama has a sweet flavor because it contains a rich source of soluble fiber oligofructose inulin. It is a prebiotic and an inert carbohydrate that does not turn into simple sugars when broken down by digestion.
This is good news for diabetics, they can eat this sweet root without worrying about their blood sugar fluctuating.
Baked Zucchini Fries
These yummy Baked Zucchini Fries are low carb, gluten-free, vegan and pair well with my delicious avocado mayo. Zucchini spears are coated with a flavorful gluten-free breading and baked for a healthier snack or side.
I decided to revisit this recipe and I was amazed at how simple it was to make and how delicious it was. It has been a popular recipe on my website for over 4 years and it is loved by my readers. The almond flour is a great gluten-free breading alternative. I would advise you not to do any substitution, I have made this recipe so many times and it has worked perfectly with almond flour.
However, I have simplified the recipe for you, in the older versions, I made flax seed egg. I decided to add the ground flax seed with the almond flour and just dip the zucchini spears into unsweetened non-dairy milk before coating with the breading. Guess what! It worked like a charm.
