This Vegan Kimchi Fried Quinoa is a must-try, it comes together so quickly and only uses 5 ingredients. My kimchi has all the ingredients that you would need in your fried quinoa, it has carrot, green onion, ginger, garlic, and Gochugaru pepper. 

It is a great way to use up leftover quinoa and it is perfect to serve for a weeknight dinner with General Tso’s Chickpeas, Sesame Tofu, or Teriyaki Soy Curls With Pineapple And Bell Peppers.

Vegan Kimchi Fried Quinoa

I’m so excited to share this delicious kimchi fried quinoa recipe with you, it is vegan gluten-free.  Kimchi is a fermented condiment made from napa cabbage.

Kimchi on its own is usually intense in flavor but when added to this fried quinoa recipe the flavors are milder but super tasty. I decided to use quinoa instead of traditional steamed rice. 

Quinoa is more nutritious, easier to cook than brown rice and I find it easier to digest, so better for those with sensitive guts. By the way, make sure you wash your quinoa before cooking because that can irritate your gut.

Kimchi Fried Quinoa Ingredients

  • Quinoa– you can use leftover steamed quinoa or make fresh. For this recipe cook 1 cup quinoa with 2 cups water, bring to boil in a medium pot over medium-high heat. Cover pot and reduce to simmer for 15-20 minutes. Remove from heat and fluff with a fork.
  • Oil – use your favorite cooking oil or 1/4 cup of the juice from the kimchi if you are on an oil-free plan. 
  • Green Onion – I added extra green onion for flavor and garnishing. 
  • Kimchi – chop kimchi to even distribute flavor throughout your dish. You can use store-bought kimchi. 
  • Sesame Oil – adds an earthy flavor and aroma to your dish. 
  • Bragg’s Liquid Aminos – added to boost flavor but this is an optional ingredient, you can add salt to taste instead.
  • Nori sheet – cut into thin strips and serve with the finished dish.
  • Cucumber – great mild flavor. 
  • Avocado – adds a yummy flavor.

How To Make Kimchi Fried Quinoa?

  1. Heat oil or kimchi juice in a large skillet over medium-high heat. Add green onion and cook stirring for 1 minute. 
  2. Stir in chopped kimchi and cook for a minute.
  3. Add cooked quinoa and stir to fully combine with the kimchi.
  4. Season with Bragg’s Liquid Aminos,  soy sauce or salt to taste. 
  5. To serve, place kimchi fried quinoa in a bowl, arrange the nori strips, cucumber rolls, and avocado slices. 
  6. Garnish with green onions.
