I’m enjoying tasty peaches this summer and as much as I eat them fresh I’m also using them in recipes like Vegan Peach Cobbler, Peach Mango Smoothie and White Peach Smoothie.
Vegan Peach Galette
One thing I love about a galette is how rustic it looks, and how easy it is to prepare, perfect for a summer brunch. I decided to prepare a vegan and gluten-free version of this classic peach dessert for my guests and everyone loved it. I made my homemade Gluten-Free Vegan Pie Crust and added peach slices tossed with sugar, cornstarch, vanilla, and salt. So easy yet it tastes amazing!

What Is A Galette?
A galette is a flat round pastry filled with fruits or savory ingredients baked on a cookie sheet, it comes from the French word Galet which means, ‘a smooth flat pebble’.
Making a pie or a tart from scratch may be daunting because of having to prepare the crust and fit it in a pie plate or tart pan. However to prepare a galette, there is no need for a pie plate or tart pan, it is a freeform version of a pie, you are basically folding the crust or encircling it around the filling.
Peach Galette Ingredients
- Pie Crust
- Peaches
- Sugar
- Cornstarch
- Vanilla
- Salt
How To Make Peach Galette?
- In a large bowl, combine gluten-free flour, sugar, and salt. Cut in non-dairy butter until mixture looks like crumbs. Add water and mix until the dough comes together into a ball. You might need more or less water so add 1 tablespoon at a time!
- Roll out dough in between two parchment paper or using hand press the dough into a disc. Cover with plastic and place in the refrigerator to chill for 30 minutes, while you prepare the peaches.
- Preheat the oven 400 degrees F.
- Place peach slices in a large bowl and toss with sugar, cornstarch, vanilla, salt to coat.
- Remove dough from the refrigerator, place dough on a sheet of parchment paper, cover with another parchment paper, roll dough to about 1/4 inch thickness. Remove the parchment paper on top and transfer the dough to a baking sheet with parchment paper.
- Add the filling to the center of the dough leaving about 2-3 inches border around the edges, fold the edges over the filling
- Bake for 35-40 minutes or until golden brown. Allow to cool completely or serve slices of it warm with scoops of vanilla ice cream.

Tips For Making Vegan Peach Galette
- If you are using my homemade pie crust, remember that it is gluten-free so it lacks the elasticity that regular wheat flour pie crust has, you have to gently bring the crust up and around the filling.
- if some of the dough tears, just press then together as much as you can. It is part of the rustic uneven nature of the galette, when baked you will be surprised how great the crust is.
- Have your children help you make galette since it is such a fun way to get them involved and love cooking!

For The Dough

- 1/4- 1/3 cup sugar, depending on the sweetness of the fruit
- 1 teaspoon vanilla
- 1 tablespoon cornstarch
- Pinch of salt

- Preheat the oven 400 degrees F.
