Vegan Waldorf Salad

For this vegan salad, I basically substituted regular mayonnaise with vegan mayonnaise, you can use storebought or my homemade Vegan Mayo recipe. 

For a lighter version substitute the vegan mayo for vegan coconut yogurt. 

What Is Waldorf Salad?

Waldorf is a classic fruit and nut salad traditionally made with apples, celery, walnuts, grapes with a mayonnaise dressing, served traditionally on a bed of lettuce as an appetizer.

Waldorf Salad Origin

Named for the Waldorf Astoria Hotel, New York City in 1896, the Waldorf salad has been a classic ever since, created for a charity ball. The recipe later appeared in The Cookbook by ‘Astor of the Waldorf’.

The original recipe didn’t contain nuts, it only had apples, celery, mayonnaise. Later on nuts, dried fruits and grapes were added.

You can substitute the apple with jicama or pear. You can also add some Baked Tofu Nuggets

Waldorf Salad Dressing

The Waldorf salad dressing is very simple, it is a mix of vegan mayonnaise, lemon, sweetener, and salt.  You can substitute the mayonnaise with either vegan yogurt, vegan sour cream or vegan cream cheese.

How To Make Waldorf Salad?

  1. In a medium bowl combine, vegan mayonnaise, lemon juice, maple syrup, and salt. Whisk to combine. 
  2. Add apples, grapes, raisins, celery, walnuts. Stir until fully combines.
  3. Refrigerate for at least one hour before serving.

Can Waldorf Salad Be Made Ahead?

Waldorf salad can be made a day ahead, prepare salad and store in an airtight container.
