What are White Sweet Potatoes?

White sweet potatoes are a type of sweet potato. You can think of them as a mixed breed. They have the shape of a sweet potato but the interior of a russet potato.

Where the regular sweet potato that we all know and love so dearly has dark brown skin and an orange interior, the sweet white potatoes are nothing like these. Although their shape resembles sweet potato on point, they have lighter skin, more like a russet potato.

As you cut into these, you will see not orange flesh, but light-colored almost white-like flesh. However, the texture of the potatoes is almost like the typical sweet potato. It can be a bit dry and crumbly to some, but it’s on the same road as the orange sweet potato.

Expert Tips

  • When choosing white sweet potatoes, look for ones that are firm and free from bruises or blemishes. The skin should be clean and not shriveled. This ensures that the potatoes are fresh and will roast well.
  • Thoroughly wash the white flesh sweet potatoes to remove any dirt or debris. Scrub them gently with a vegetable brush under cold running water.
  • The initial baking step at 350 degrees F is crucial for partially cooking the sweet potatoes. Be sure not to overcook them during this step; they should be soft on the outside but not fully cooked through. This helps to achieve the perfect texture when roasting them later.
  • When infusing the olive oil with garlic and rosemary, ensure you cook it over low heat. Do not let the garlic and rosemary burn, as this can make the oil bitter. You only need to fry them briefly to release their natural flavors and aromas.
  • After the initial baking, allow the sweet potatoes to cool before cutting them into wedges. Cutting them while they’re still hot can make them mushy.

Storage Information

Refrigeration: If you have leftover roasted white sweet potatoes, allow them to cool to room temperature. Then, place them in an airtight container. Store the container in the refrigerator for up to 3-4 days.

Freezing: While roasted white sweet potatoes can be frozen, it’s important to note that freezing can change their texture.

If you choose to freeze them, first allow them to cool completely. Place the cooled potatoes in a single layer on a baking sheet and freeze until they are firm.

Once frozen, transfer them to an airtight freezer-safe container or a heavy-duty freezer bag. Frozen roasted sweet potatoes can be stored for about 2-3 months.

Reheating: When ready to reheat, preheat your oven to 375 degrees F. Place the refrigerated or thawed frozen sweet potatoes on a baking sheet. Reheat them in the oven for 10-15 minutes or until they are heated through. This will help restore some of their original texture.

You can also reheat them in the microwave for a quicker option, but the texture may not be as crisp.
