First, prepare the sweet potatoes, you can bake or boil them. 

To boil- Bring a medium pot with water to boil over medium heat. In the meantime, wash and peel sweet potatoes. Cut into chunks and add to the boiling water, cook for 12- 15 minutes until tender.

Step 1: Prepare The Crust

  1. Preheat the oven to 350°F, then set aside a 9-inch pie dish.
  2. Add the gingersnap cookies and process to a coarse crumb.
  3. Next, add pecans and process until it crumbles well. Add the melted vegan butter and pulse for a few more seconds until a crumbly dough forms.
  4. Transfer the dough to the pie dish and spread it out evenly, using your fingers to work from the center up to the sides.
  5. Use your fingers to work your way outward and up the sides. Bake in the oven for 8 minutes, then set aside to cool.

Ingredients

  • 2 pounds purple sweet potatoes

For The Crust

  • 1 1/2 cups gingersnaps cookies (I used gluten-free, vegan cookies)
  • 1 cup pecans
  • 1/3 cup melted vegan butter (I used Earth Balance Buttery Spread)

For The Filling

  • 1 14-ounce can coconut milk
  • 1 cup coconut sugar
  • 1 inch fresh ginger
  • 1 teaspoon vanilla
  • 1/4 cup cornstarch
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  • Preheat the oven to 400°F. Scrub purple sweet potatoes, dry them with a clean towel. Prick with a knife and place potatoes on a baking tray.
  • Bake them for about 1 hour, turning them after 30 minutes. Depending on the size you might need to bake them for longer. Allow sweet potatoes to cool.

To Prepare The Crust

  • Preheat oven 325 degrees F. Add gingersnap cookies and pecans to a food processor and process them into crumbs. Transfer cookie crumbs from the food processor into the bowl. Add melted butter and stir.
  • Press cookie crust on the bottom and sides of a pie plate and bake for 10-15 minutes or until crust is golden brown but not burnt.

For The Filling

  • Add purple sweet potatoes, coconut milk, coconut sugar, ginger, vanilla, cornstarch, cinnamon, nutmeg, and salt in the bowl of a high-speed blender and process until filling is smooth. You might have to do it in batches.
  • Pour the filling into the crust
  • Turn the oven up to 350 degrees F. Bake the pie for about 30-35 minutes or until the filling is set in the middle. Cool and serve with coconut whip cream
