- Garlic: Garlic is an important ingredient in this recipe. Use fresh garlic instead of aged ones for maximum flavor. Avoid using sprouted garlic.

- Cumin seeds: These seeds add a special smokey flavor.
- Green chilies: Wash them thoroughly. Cut the stem off. Cut into big pieces. If you don’t want your sauce too spicy, just take out the seeds.

Storing Suggestions
- Store this chutney in a clean, sterilized jar or container in the refrigerator for up to one week.
- You can also freeze this chutney either in an ice cube tray or containers/jars for up to a month or two in the freezer.
- Thaw it in the refrigerator or kitchen counter before using it.
Notes:
- You can make this chutney in a blender too, but that will have a different texture.
- If handling chilies is something you’re not used to, wear gloves. Simply to avoid the burning sensation, this is. After finishing the task with the chili, wash your hands thoroughly with soap.
- It’s best to use dry Kashmiri red chilies or other mild chilies when preparing this chutney to achieve a gorgeous red color without overwhelming the taste buds with heat.
- This chutney’s consistency shouldn’t be either too thick or too runny.
- Vinegar can be used in place of lemon juice to increase the product’s shelf life.
- If you prefer a little sweetness, add a half teaspoon of sugar; otherwise, omit it.
- Use fresh garlic cloves, not wilted or dried, at all costs.
- Sprouting garlic cloves should not be used because they would bitterize the chutney.
- Don’t skip lemon juice or vinegar; they are essential ingredients in this recipe since they help to lessen the strong flavor and taste of garlic.
- Use fresh water or water that has been boiled and chilled for a longer shelf life.
- Although the storage life of this chutney is a week in a refrigerator, it is advised to consume it fresh.
Variations
- Five ordinary chilies and five Kashmiri chilies can also be used in its instead of red chili flakes and green chili.
- Use any garlic you have, large or small.
- You can add Jaggery or cane sugar to balance the flavor.
- Substitute vinegar for lemon juice. Because vinegar promotes a longer shelf life, I like it. The vinegar won’t smell in the chutney.
- Fresh red chilies can be used in place of red chili flakes. To make this chutney, slit fresh red chilies, remove the seeds, and combine them with either fried or raw garlic. The chutney will, however, lose some of its shelf life.
